Almond Payasam

^ Preparation Time : 10 Minutes. ^ Cooking Time : 30 Minutes. ^  Serves 6. ^ Soaking Time : 2 Hours

बादाम पायसम

Ingredients (सामग्री)

Almonds (बादाम) ---------- 3/4 Cups

Milk (दूध) ---------- 5 Cups or 1 liter

Sugar (चीनी) ---------- 1/2 cup

Cardamom Powder (इलायची पाउडर) ---------- 1/2 smallspoon

Nutmeg Powder (जायफल पाउडर) ---------- 1 smallspoon

Saffron (केसर) ---------- 1 smallspoon

How to make Almond Payasam (बादाम पायसम बादाम पायसम बनाने की विधि)

-> First soaked the Almonds (बादाम) in hot water for 2 hours. Drain, remove the skin of the Almonds (बादाम) and blend in a mixer to a fine paste and keep aside. (बादाम को गरम पानी में भिगो कर रखे और बाद में बादाम के छिलके छिल कर मिक्सी में पीस ले)

-> Now boil the milk in a heavy - bottomed vessel till it reduced to 3/4 of its quantity, while stirring continuously.(दूध को लगातार चलाते हुए पकाये)

-> Add the almond paste (बादाम पेस्ट) + Sugar (चीनी) + Cardamom Powder (इलायची पाउडर) + Nutmeg Powder (जायफल पाउडर) + Saffron (केसर) and mixed very well and simmer for 5 minutes, while stirring continuously. Keep aside.(दूध में बादाम पेस्ट + चीनी + इलायची पाउडर + जायफल पाउडर + केसर मिला कर पकाये)

-> When it cools completely, refrigerate at least for 2 hours.(ठंडा करके फ्रिज में रखे)

-> Almond Payasam (बादाम पायसम) is ready.

Nutritional value (पोषण का महत्व) :  Vitamin E : 1.9 mg per Serving

Note : The almonds make this delicacy vitamin E rich and milk further adds calcium and vitamin D to create thoroughly satisfying sweet for the mother.
