आलू की कचौड़ी

Ingredients (सामग्री)

Fine flour or Wheat Flour (मैदा या आटा) ---------- 300 gms

Sooji (सूजी) ---------- 100 gms

Refined oil (रिफाइन्ड तेल) ---------- 2 spoon

Salt (नमक) ---------- To taste

Baking soda (खाने का सोडा) ---------- 1/4 Spoon 

Ingredients for Stuffing Kachori (कचौरी भरने के लिये सामग्री)

Boiled potatoes (उबले हुये आलू) ---------- 5-6

Oil (तेल) ---------- 2 spoon

Cumin (जीरा) ---------- 1/2 small spoon

Coriander Powder (धनियां पाउडर) ---------- 1-1/2 Spoon

Chopped Green Chili (बारीक कटी हरी मिर्च) ---------- 2

Grated Ginger Pieces (कद्दूकस किया अदरक का टुकड़ा) ---------- 1-1/2 inch

Amchoor Powder (अमचूर पाउडर) ---------- 1/2 spoon

Garam Masala (गरम मसाला) ---------- 1/4 smallspoon

Salt (नमक) ---------- 1/2 spoon

Oil (तेल) ---------- for fried the Kachori

How to make Aloo ki Kachori (आलू की कचौड़ी बनाने की विधि)

-> First break the Boiled potatoes (आलू). (उबले आलूओ को तोड़ लिजिये)

-> Heat the 2 spoon Oil (तेल) in fry Pan. When Oil (तेल) became hot then add Cumin (जीरा) and fried it. After you add Coriander Powder (धनियां पाउडर) + Chopped Green Chili (बारीक कटी हरी मिर्च) + Ginger (अदरक) and cooked it for 2 minute. (तेल + जीरा + धनियां पाउडर + कटी हरी मिर्च + अदरक फ़्राइ करे)

-> Now you add Boiled potatoes (उबले हुये आलू) + Amchoor Powder (अमचूर पाउडर) + Garam Masala (गरम मसाला) + Salt (नमक) and roast it for 6-7 minute. Stuffing is ready. (इसमे उबले हुये आलू + अमचूर पाउडर  + गरम मसाला + नमक मिलाकर फ़्राइ करे, आलू की पिठ्ठी तैयार है )

-> Now filtrate (छानना) the Fine flour (मैदा) + Sooji (सूजी) in a rosette (थाली). Now you add Salt (नमक) + 1 tablespoon Refined oil (रिफाइन्ड तेल) + Baking soda (खाने का सोडा) and mixed very well.  Now with the help of water (पानी) make a smooth dough. Keep this dough for 20-25 minute. (मैदा + सूजी छाने और नमक +  रिफाइन्ड तेल + खाने का सोडा मिला कर पानी की सहायता से नरम आटा गूंथ ले)

-> Now make a small ball of same sized in the smooth dough.(आटे की छोटी गेंदे बनाये)

-> Now take one ball and roll it small, with the help of rolling pin (बेलन). Now put the 1 tablespoon Matar stuffing (मटर की पिठ्ठी) into this roll and  cover the mixture by small roti. Now with the help of palm flat this roll. Now with the help of rolling pin (बेलन) roll it. (गोले को चकले पर बेलन की सहायता से थोड़ा सा बेलें और दाल की पिठ्ठी भरे धयान रहे की कचोरी फट्नी नहीं चाहिये)

-> Heat the Oil (तेल) in Cauldron (कडाही). Now drop the rolled Kachori (कचौरी) in the oil carefully and fried both side on medium flame. This should take only a few minute. Make all Kachori (कचौरी) similar type. (गरम तेल में कचौरी मीडियम गैस पर तलें)

-> Hot-Hot tasty Aloo ki Kachori (आलू की कचौड़ी ) is ready. Served Green coriander chutney (हरे धनिये की चटनी), tomato chutney (टमाटर की चटनी) and spices Sabzi of potato (आलू की मसाले वाली सब्जी).(हरे धनिये की चटनी + टमाटर की चटनी + आलू की मसाले वाली सब्जी से परोसे)

Ingredients (सामग्री)

Cooked Rice (पके हुये चावल) ---------- 2 Cup

Gram Flour (बेसन) ---------- 1 Cup
