Andhra Chilli Chicken

आंध्र चिल्ली चिकन

Ingredients (सामग्री)


Chicken (चिकन) ---------- 750 grams (cut into 8 pieces)

Dried red chillies (सूखी लाल मिर्च) ---------- 10-12

Garlic (लहसुन) ---------- 8-10 cloves

Ginger (अदरक) ---------- 2 inch piece

Rice (चावल) ---------- 2 tablespoons

Lemon juice (नींबू का रस) ---------- 4 tablespoons

Salt (नमक) ---------- To taste

Curry leaves (करी पत्ते) ---------- 20-25

Yogurt (दही) ---------- 2 tablespoons

Oil (तेल) ---------- 3 tablespoons

Fine flour (मैदा) ---------- 1/4 cup

Fresh coriander leaves (ताजा हरा धनिया) ---------- a few sprigs

Onion rings (प्याज के छल्ले) ---------- a few

Thin strips of Green capsicum (हरी शिमला मिर्च की पतली स्ट्रिप्स) ---------- a few

Thin strips of Red capsicum (लाल शिमला मिर्च की पतली स्ट्रिप्स) ---------- a few

Thin strips of Yellow capsicum (पीली शिमला मिर्च की पतली स्ट्रिप्स) ---------- a few


How to make Andhra Chilli Chicken (आंध्र चिल्ली चिकन बनाने की विधि)


-> First remove the seed of the Dried red chillies (सूखी लाल मिर्च) and put into a mixer jar. Now you add Garlic (लहसुन) + Ginger (अदरक) + Rice (चावल) + 2 tablespoon Lemon juice (नींबू का रस) + Salt (नमक) and grind it. (सूखी लाल मिर्च के बीज निकाल कर लहसुन + अदरक + नींबू का रस + नमक के साथ पीसे)


-> You also add the 10-12 Curry leaves (करी पत्ते) and again grind it and make a smooth paste. (इसमें करी पत्ते मिला कर दूबारा पीसे)


-> Put the paste into a large bowl, add chicken pieces (चिकन के टुकड़े) + Yogurt (दही) and mix well. (पेस्ट को कटोरे में निकाले और इसमें दही + चिकन के टुकड़े मिलाये)


-> Add remaining Lemon juice (नींबू का रस) and mix till the masala coats all the chicken pieces (चिकन के टुकड़े) well. (बचा नींबू का रस इसमें मिलाये)


-> Chopped remaining Curry leaves (करी पत्ते) and add to the chicken (चिकन) and mix and set aside to marinate for 2-3 hours. (करी पत्तो को काटे और मसाला लगे चिकन में मिलाये)


-> Now heat the Oil (तेल) in a non stick pan. You also coat the chicken pieces (चिकन के टुकड़े) in Fine flour (मैदा), shake off extra flour and place in the pan and cook on medium heat till the underside is lightly browned. (मसाला लगे चिकन को मैदा में लपेटे और गरम तेल में धीमी आंच पर फ्राई करे)


-> Turn the chicken pieces (चिकन के टुकड़े) till the other side is similarly cooked. Now you add chopped coriander leaves (कटा हरा धनिया) and mixed very well. Sprinkle a little water, reduce heat, cover and cook for 7-8 minutes. (इसमें कटा हरा धनिया + थोडा सा पानी मिलाये और पकाये)


-> Andhra Chilli Chicken (आंध्र चिल्ली चिकन) is ready. Garnished it with Onion rings (प्याज के छल्ले) + Thin strips of Green capsicum (हरी शिमला मिर्च की पतली स्ट्रिप्स) + Thin strips of Red capsicum (लाल शिमला मिर्च की पतली स्ट्रिप्स) + Thin strips of Yellow capsicum (पीली शिमला मिर्च की पतली स्ट्रिप्स) (प्याज के छल्ले + हरी शिमला मिर्च + लाल शिमला मिर्च + पीली शिमला मिर्च से सजाये)
