Bajra Methi Khakhra

^ Preparation Time : 10 Minutes. ^ Cooking Time : 25 Minutes. ^ Makes 4 Khakhra

बाजरा मेथी खाखरा

Ingredients (सामग्री)


Millet flour (बाजरे का आटा) ---------- 1/2 cup

Wheat Flour (गेहूं का आटा) ---------- 2 tablespoon

Finely Chopped Fenugreek leaves (बारीक कटी मेथी के पत्ते) ---------- 2 tablespoon

Ginger-Garlic Paste (अदरक-लहसुन का पेस्ट) ---------- 1/2 smallspoon

Finely Chopped Green Chillies (बारीक कटी हुई हरी मिर्च) ---------- 1/2 smallspoon

Sesame Seeds (तिल) ---------- 1/2 tablespoon

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 smallspoon

Oil (तेल) ---------- 1 tablespoon

Salt (नमक) ---------- To taste

Ghee (घी) ---------- For cooking

How to make Bajra Methi Khakhra (बाजरा मेथी खाखरा बनाने की विधि)


-> First filtrate the Millet flour (बाजरे का आटा) and Wheat Flour (गेहूं का आटा) in a bowl and mixed very well. (गेहूं के आटे और बाजरे के आटे को छाने)

-> Now you add Fenugreek leaves (मेथी के पत्ते) + Ginger-Garlic Paste (अदरक-लहसुन का पेस्ट) + Finely Chopped Green Chillies (बारीक कटी हुई हरी मिर्च) + Sesame Seeds (तिल) + Oil (तेल) + Turmeric Powder (हल्दी पाउडर) + Salt (नमक) into Flour (आटा) and mixed very well.(मेथी के पत्ते + अदरक-लहसुन का पेस्ट + बारीक कटी हुई हरी मिर्च +  तिल + तेल + नमक को आटे में अच्छी तरह मिलाये)

-> Now with the help of Lukewarm water (गुनगुना पानी) make a smooth dough.(गुनगुना पानी की सहायता से नरम गूथ ले)

-> Now Divide the dough into equal portions and shape into round small balls. (आटे की छोटी गेंदे बनाये)

-> Now with the help of Rolling pin (बेलन) make a 5 inch thin roti. You can use the dry flour to make the roti. And put it on hot tava and using little Ghee (घी) cooked the Khakhra (खाखरा) until  pink spots appear on both the side . (सूखे आटे की सहायता से पतला - पतला बेल ले और तवे पर डाले) 

-> Now with the help of folded muslin cloth, press the Khakhra (खाखरा) from the centre and at the edges and cook on slow flame gas till they became crispy. (मलमल के कपड़े की मदद से खाखरे को केंद्र से और किनारों पर दबाएँ और धीमी लौ गैस पर खस्ता होने तक पकाये)

-> Prepare all other Khakhra (खाखरा) is same type. Cool it and store it in an air - tight container

Nutritional value (पोषण का महत्व) :  Iron : 1.2 mg per Khakhra (खाखरा)

Note : Here's a day snack to ease morning sickness. The addition of till improves the iron content of these Khakhra too.
