Bajre Ki Khichdi

बाजरे की खिचड़ी

Ingredients (सामग्री) : 

Millet (बाजरा) ---------- 11/2 cups

Split green gram skinless (धुली  मूंग की दाल) ---------- 1/2 cup

Oil (तेल) ---------- 3 tablespoons

Cumin seeds (जीरा) ---------- 1 teaspoon

Green chilies (हरी मिर्च) ---------- 2-3

Chopped Onions (कटी प्याज ) ---------- 2 medium in sized

Asafoetida (हींग) ---------- 1/4 teaspoon

Turmeric powder (हल्दी पाउडर) ---------- 1/2 teaspoon

Red chili powder (लाल मिर्च पाउडर) ---------- 1 teaspoon

Salt (नमक) ----------  to taste 

Carrot (गाजर) ---------- 1 medium

Potatoes (आलू) ---------- 2 medium

French beans(फ्रेंच बीन्स) ---------- 15-20

Green peas (हरी मटर) ---------- 1/4 cup 

How to make Bajre Ki Khichdi (बाजरे की खिचड़ी बनाने की विधि)

-> First washed the Millet (बाजरा) with clean water and soaked it into water for overnight. You also soaked the Split green gram Dal (धुली मूंग की दाल) into water. (बाजरा धो कर रात भर पानी में भिगो कर रखे, धुली मूंग की दाल को भी धो कर पानी में भिगो दे)

-> First cut the Carrot (गाजर) + Potatoes (आलू) into small cubes. You also cuts the French beans(फ्रेंच बीन्स) and Green chilies (हरी मिर्च). (गाजर + आलू + फ्रेंच बीन्स + हरी मिर्च को काटे)

-> Now heat the 2 tablespoon Oil (तेल) in a pressure cooker (प्रेशर कुकर). When Oil (तेल) became hot then add Cumin seeds (जीरा) and fried it for 1 minute. After you add Green chilies (हरी मिर्च) + Chopped Onions (कटी प्याज) and fried it until Onions (प्याज) turn to golden brown in color. (तेल + जीरा + हरी मिर्च + कटी प्याज को फ्राई करे)

-> After you add Asafoetida (हींग) + Turmeric powder (हल्दी पाउडर) + Red chili powder (लाल मिर्च पाउडर) + Millet (बाजरा) + Split green gram skinless (धुली मूंग की दाल) + Salt (नमक)  and mixed very well and cooked it for 2-3 minute. (इसमें  हींग + हल्दी पाउडर + लाल मिर्च पाउडर + बाजरा + धुली मूंग की दाल + नमक मिला दे)

-> Now you add  8 cup water and closed the lid of the cooker and cooked it on a high heat up to 3-4 whistles. After reduce the gas and cooked it for 15 minute. (8 कप पानी मिला कर कुकर का ढक्कन बंद कर के पकाये)

-> Now heat 1 tablespoon Oil (तेल) in a non stick pan. When Oil (तेल) became hot then add Carrot (गाजर) + Potatoes (आलू) and fried it. Covered it and cooked it for 3-4 minute. (तेल + गाजर + आलू  फ्राई करे और ढक कर पकाये)

-> Now you add remaining Turmeric powder (हल्दी पाउडर) + Red chili powder (लाल मिर्च पाउडर) + Salt (नमक) and mixed very well. You also add the French beans(फ्रेंच बीन्स) + Green peas (हरी मटर) and mixed it and cooked it until all the vegetables are cooked.(हल्दी पाउडर + लाल मिर्च पाउडर + नमक + फ्रेंच बीन्स+  हरी मटर मिला कर पकाये)

-> Open the lid of the pressure cooker when the pressure reduces completely then add the cooked vegetables (पकी हुई सब्जियां) and mix well (कुकर का प्रेशर खत्म होने पर इसको पकी सब्जियों में मिलाये)

-> Delicious Bajre Ki Khichdi (बाजरे की खिचड़ी) is ready. Served it hot.
