Benarasi Bharwan Aloo Recipe (बनारसी भरवाँ आलू व्यंजन)

Ingredients (सामग्री):

Potatoes medium sized (आलू) ----------- 20-25

Grated cheese (पनीर) ----------- 100 grams

Tamarind pulp (इमली गूदा) ----------- 1 1/2 tsp

Tomato puree (टमाटर चटनी) ----------- 2 cups

Chopped coriander leaves (कटा हरा धनिया पत्ती) ----------- 2 tsp

Grated Ginger (कद्दूकस किये अदरक) ----------- 1 inch piece

Chopped Green chilies (कटी हरी मिर्च) ----------- 4

Raisins (किशमिश) ----------- 10

Chopped Cashewnuts (कटे काजू) ----------- 10

Cumin seeds ( जीरा बीज) ----------- 1 tsp

Turmeric powder ( हल्दी पाउडर) ----------- 1/2 tsp

Red chilli powder (लाल मिर्च पाउडर ) ----------- 1/2 tsp

Dry mango powder (अमचुर) ----------- 1/2 tsp

Grated Jaggery (कद्दूकस किया गुड़) ----------- 1/2 cup

fresh cream (ताजा क्रीम) ----------- 2 tsp

Asafoetida (हिंग) ----------- a pinch

Fennel seeds (सौंफ) ----------- 1 tsp

Salt (नमक) ----------- to taste

Oil (तेल) ----------- For deep fry 

How to make Benarasi Bharwan Aloo  (बनारसी भरवाँ आलू बनाने की विधि) :

-> First peel potatoes (आलू) and halve (आधा करना) them. Wash the potatoes (आलू) and Wipe dry. (आलू छिले और आधा काट कर धो ले)

-> Dry roast fennel seeds (सौंफ) and crush slightly. (सौंफ भुने और पीस ले)

-> Heat sufficient Oil (तेल) in a kadai and deep-fry potatoes (आलू) till they are golden brown. And keep it aside on absorbent paper and cool it. (तेल + आलू तल ले और ठंडा करे)

-> Scoop out the middle of each half potato (आलू को बीच से खोखला करे)

-> Add paneer (पनीर) + Chopped coriander leaves (कटा हरा धनिया पत्ती) + Chopped Green chilies (कटी हरी मिर्च) + Raisins (किशमिश) + Chopped Cashewnuts (कटे काजू) + Salt (नमक) and mix well. This Mixture (मिश्रण) is ready for stuffing. (पनीर + कटा हरा धनिया + कटी हरी मिर्च + किशमिश  + कटे काजू + नमक मिलाये भरने का मसाला तैयार है)

-> Stuffed the scooped out potato halves with this filling. (आलू में मसाला भरे)

-> Heat Oil (तेल) in a kadai and add Asafoetida (हिंग) + roasted Fennel seeds (भुने सौंफ) + Cumin seeds ( जीरा बीज) + Grated Ginger (कद्दूकस किये अदरक) and cook it. Now Add Tomato puree (टमाटर चटनी) and mix well. (तेल + हिंग + भुने सौंफ + जीरा बीज + कद्दूकस किये अदरक + टमाटर चटनी मिला कर फ़्राइ करे)

-> Add Turmeric powder ( हल्दी पाउडर) + Red chilli powder (लाल मिर्च पाउडर) + half a cup of water (पानी) and cook 3 - 4 minutes. (इसमें हल्दी पाउडर + लाल मिर्च पाउडर + पानी मिला कर पकाये)

-> Add Tamarind pulp (इमली गूदा) + Dry mango powder (अमचुर) + Grated Jaggery (कद्दूकस किया गुड़) and Salt (नमक) to taste. (इसमें इमली गूदा + अमचुर + कद्दूकस किया गुड़ + नमक मिला कर पकाये)

-> Add stuffed potatoes to this gravy and cook on low heat for 3 - 4 minutes. Add fresh cream (ताजा क्रीम) and stir gently. Cook till the gravy is reduced slightly. (भरवाँ आलू + ताजा क्रीम डाल कर पकाये)

-> Benarasi Bharwan Aloo  (बनारसी भरवाँ आलू) is ready to served and served it hot.
