Bengali Arbi Recipe

(बंगाली अरबी)

Ingredients (सामग्री)


Bengali Colocasia (बंगाली अरबी) ---------- 300 gms

Tomatoes (टमाटर) ---------- 2-3

Coriander Powder (धनियां पाउडर) ---------- 1 spoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/4 spoon

Green Chili (हरी मिर्च) ---------- 2-3

Turmeric Powder (हल्दी पाउडर) ---------- 1/4 spoon

Yogurt (दही) ---------- 1 bowl

Oil (तेल) ---------- 2 tablespoon

Garam Masala (गरम मसाला) ---------- 1/4 spoon

Chopped Green Coriander (कटा हरा धनियां) ---------- 1 tablespoon

Ginger Piece (अदरक का टुकड़ा) ---------- 1 inch long pieces

Asafoetida (हींग) ---------- 1-2 pinch

Carom Seeds (अजवायन) ---------- 1/2 spoon

Salt (नमक) ---------- To taste


How to make Bengali Arbi Recipe (बंगाली अरबी बनाने की विधि)


-> First washed the Bengali Colocasia (बंगाली अरबी) with clean water. Cuts the Bengali Colocasia (बंगाली अरबी) into rounded shape. (बंगाली अरबी  धोकर और छिल कर गोल मोटे टुकड़ों में काट लें)


-> Takenout Tomatoes (टमाटर)+Green Chili (हरी मिर्च)+Ginger Piece (अदरक का टुकड़ा) into grinder and grind and make a smooth paste. Now you add Yogurt (दही) into this paste and again grind it. Taken out this mixture in a bowl. (टमाटर + हरी मिर्च + अदरक + दही पीसे)


-> Now take a pressure cooker and heat some tablespoon Oil (तेल). Now add Bengali Colocasia (बंगाली अरबी) and fried it until they trun to golden brown in color. (कुकर में थोडा सा तेल डाल अरबी फ़्राइ करे)


-> Now take a pressure cooker and heat 2 tablespoon Oil (तेल) when Oil (तेल) became hot then add Asafoetida (हींग) + Carom Seeds (अजवायन) and fried it. Now you add Turmeric Powder (हल्दी पाउडर) + Coriander Powder (धनियां पाउडर) + Red Chili Powder (लाल मिर्च पाउडर) and cooked it for 2 minute. (कुकर में तेल + हींग + अजवायन + हल्दी पाउडर + लाल मिर्च पाउडर फ़्राइ करे)


-> Now you add Tomatoes-Green Chili-Ginger-Yogurt paste (टमाटर-हरी मिर्च-अदरक-दही  का पेस्ट) and mixed very well. Cooked these until Oil (तेल) are separated from masala. (इसमे टमाटर-हरी मिर्च-अदरक-दही  का पेस्ट मिला कर पकाये)


-> Now you add fried Bengali Colocasia (तली बंगाली अरबी) + Salt (नमक) and cooked it for 3-4 minute. After you add 1 glass water and closed the pressure cooker by lid (ढक्कन). (तली बंगाली अरबी + नमक  पानी मिला कर कुकर बन्द कर दें और पकाये )


-> Off the gass when cooker get 1 whistle.  When pressure of the cooker are remove then open the cooker lid and you add Garam Masala (गरम मसाला) and mixed it. (कुकर में  १ सीटी आने पर गैस बन्द करे प्रेसर खतम होने  गरम मसाला मिलाये)


-> Hot and tasty Bengali Arbi (बंगाली अरबी) is ready. Taken out this sabzi in a bowl and garnished it Chopped Green Coriander (कटा हरा धनियां). Served it with Parathed (परांठे), Roti (चपाती) or Naan (नान). (हरा धनियां डाल कर सजाये और परांठे, चपाती, नान से परोसे)
