Besani Arbi

 (बेसनी अरबी)

Ingredients (सामग्री)


Colocasia (अरबी) ---------- 400 gms

Gram Flour (बेसन) ---------- 1 tablespoon

Garam Masala (गरम मसाला) ---------- 1/2 spoon

Coriander Powder (धनियां पाउडर) ---------- 1/2 spoon

Salt (नमक) ---------- 1/2 spoon

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 smallspoon

Oil (तेल) ---------- For fried and cooked

Amchoor Powder (अमचूर पाउडर) ---------- 1/2 spoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/2 spoon


Ingredients For Tadka (तड़्के के लिये सामग्री)


Carom Seeds (अजवायन) ---------- 1/2 spoon

Lime juice (नीबू का रस) ---------- 1 small spoon

Chopped Green Coriander (कटा हरा धनियां) ---------- 1 tablespoon

Chopped Green Chili (कटी हरी मिर्च) ---------- 2

Chopped Ginger (बारीक कटा अदरक) ---------- 1 spoon

Turmeric Powder (हल्दी पाउडर) ---------- 1/4 spoon


How to make Besani Arbi (बेसनी अरबी बनाने की विधि)


-> First washed the Colocasia (अरबी) with clean water. Boiled the Colocasia (अरबी) in pressure cooker. (अरबी धो कर प्रेशर कुकर में उबाले)


-> When cooker gives the 1 Whistle (सीटी) then off the gas. When boiled Colocasia (उबली अरबी) became cool then peel and cut it into two parts. ).(अरबी ठंडी होने पर छिले और दो भाग मे काटे)


-> Now take Gram Flour (बेसन) + Salt (नमक) + Amchoor Powder (अमचूर पाउडर) + Red Chili Powder (लाल मिर्च पाउडर) + Turmeric Powder (हल्दी पाउडर) +  Coriander Powder (धनियां पाउडर) in a plate and mixed very well. (बेसन + नमक + अमचूर पाउडर + लाल मिर्च पाउडर + हल्दी पाउडर + धनियां पाउडर प्लेट मे मिलाये)


-> Now put the oil on a plate (अब किसी प्लेट पर तेल लगा लो). After take one Colocasia (अरबी) pieces and covered it with Gram Flour Masala (बेसन बाले मसाले) and put it on Oil the plate. Similar type all Colocasia (अरबी) pieces are covered it and put it into plate (अरबी के एक टुकड़े को ले और बेसन बाले मसाले में लपेटे और तेल लगी प्लेट में रख दे)


-> Now heat the Oil (तेल) in a fry pan. When Oil (तेल) became hot then  fried the 4-5 pieces of Colocasia (उबली अरबी) and fried it until they trun to golden brown. Takenout these in a plate. Similar type fried all boiled Gram Flour Masala Colocasia (अरबी). (गरम तेल में अरबी के टुकडो को तल ले)


-> Now in other fry pan heat 2 tablespoon Oil (तेल). When Oil (तेल) became hot then add Carom Seeds (अजवायन) and fried it. After you add Turmeric Powder (हल्दी पाउडर) + Chopped Green Chili (बारीक कटी हरी मिर्च) + Chopped Ginger (बारीक कटा अदरक) and cooked it 1-2 minute. After you add Colocasia Pieces (अरबी के टुकड़े) and cooked it for 3-4 minute. Off the gas, after you add Lime juice (नीबू का रस) + Chopped Green Coriander (कटा हरा धनियां) and mixed very well. (तेल + अजवायन + हल्दी पाउडर + हरी मिर्च + अदरक + अरबी के टुकड़े मिला कर पकाये और नीबू का रस + हरा धनियां मिलाये) 


-> Your Fried Besani Arbi (बेसनी अरबी) is ready. Served it with Rotil (चपाती), Naan (नान), Paratha (परांठे)(अरबी को चपाती, नान, परांठे के साथ परोसे)
