Ingredients (सामग्री)

Fine-Flour (मैदा) ---------- 400 gms or 4 cup

Rava or Sooji (सूजी(रवा)) ---------- 1/2 cup

Baking soda (बेकिंग सोडा) ---------- 3/4 spoon

Yogurt (दही) ---------- 100 gms or 1/2 cup 

Sugar (चीनी) ---------- 1 spoon

Oil (तेल) ----------  For fried

Salt (नमक) ---------- 3/4 spoon

How to make Bhature Recipe (भटूरे बनाने की विधि)

-> First filtrate (छानना) the Fine-Flour (मैदा) and Rava (रवा) and mixed very well. (मैदा + सूजी को छाने)

-> Now add 2 tablespoon Oil (तेल) + Baking soda (बेकिंग सोडा) + Yogurt (दही) + Sugar (चीनी) + Salt (नमक) and mixed very well. Now with the help of Lukewarm Water (गुनगुने पानी) make a smooth daugh like poori. Keep this daugh for 5-6 hours at hot place. (आटे में नमक + तेल + बेकिंग सोडा + चीनी  मिलाकर गुनगुने पानी की सहायता से नरम गूथ ले)

-> Now Divide the dough into equal portions and shape into round small balls. (आटे की छोटी गेंदे बनाये). Take one ball and roll it slightly and make size just like a poori. If you are unable to roll the Bhatura (भटूरे), then you can make the Bhatura (भटूरे) with your palm. (भटूरे आप बेलन से और अपने हाथो से भी बना सकती है)

-> Now heat the Oil (तेल) in a Cauldron (कडाही). When Oil (तेल) became hot then drop the rolled Bhatura (भटूरे) and with the presser of Ladle inflate the Bhatura (भटूरे) and fried it on both side untilit trun to golden brown in color. (गरम तेल में भटूरे हलके भूरे होने तक तल ले)

-> Hot - Hot Bhatura (भटूरे) is ready. Served it with chole (छोले), Pickle (अचार) and green chutney (हरी चटनी). But perfect combination is chole (छोले) and Bhatura (भटूरे). (छोले-अचार-हरी चटनी से परोसे)
