Biryani With Chutney Chicken

बिरयानी चटनी चिकन के साथ 

Ingredients (सामग्री)

Soaked Basmati rice (भीगे बासमती चावल) ---------- 1 1/2 cups

Chicken (चिकन) ---------- 800 grams (pieces on bone)

Salt (नमक) ---------- To taste

Cinnamon (दालचीनी) ---------- 2 inch stick

Green cardamoms (हरी इलायची) ---------- 6

Cloves (लौंग) ---------- 8

Green chutney (हरी चटनी) ---------- 1/2 cup

Yogurt (दही) ---------- 1/2 cup

Turmeric powder (हल्दी पाउडर) ---------- 1/4 smallspoon

Ghee (घी) ---------- 3-4 tablespoons

Sliced Onions (कटा हुआ प्याज) ---------- 2 medium

Ginger paste (अदरक पेस्ट) ---------- 1 smallspoon

Garlic paste (लहसुन पेस्ट) ---------- 1 smallspoon

Chopped Fresh coriander leaves (कटा हुआ ताजा हरा धनिया) ---------- 1/2 bunch

Saffron (केसर) ---------- a few strands (dissolved in 2 tablespoons of milk (दूध))

Rose petals (गुलाब की पंखुड़िया) ---------- a few

Fresh mint leaves (ताजा पोदीना) ---------- few sprigs

Sliced and deep fried Onions (कटा और तला हुआ प्याज)  ---------- 2-3 medium

Kewra water (केवरा पानी) ---------- 1 smallspoon

Rose water (गुलाब जल) ---------- 1 smallspoon

Garam masala powder (गरम मसाला पाउडर) ---------- 1 smallspoon

How to make Biryani With Chutney Chicken (बिरयानी चटनी चिकन के साथ बनाने की विधि)

-> First cooked the rice (चावल) with water (पानी) + Salt (नमक) + 1/2 Cinnamon (दालचीनी) + 3 Green cardamoms (हरी इलायची) + Cloves (लौंग) till 3/4 parts of rice (चावल) is done. (चावल + पानी + पानी + दालचीनी + हरी इलायची + लौंग को मिला कर चावल के 3/4 पकाने तक पका ले)

-> Drain the rice (चावल) and keep aside. (पके चावल में से पानी निकाल कर अलग रख दे)

-> Now take the Green chutney (हरी चटनी) in a bowl and add Yogurt (दही) + Salt (नमक) + Turmeric powder (हल्दी पाउडर) and mix well. Now you add chicken pieces (चिकन के टुकड़े) and mix well and Marinade it for an hour. (हरी चटनी + दही + नमक + हल्दी पाउडर + चिकन के टुकड़े मिला ले और 1 घंटे के लिये रख दे)

-> Now heat the Ghee (घी) in a pan. When Ghee (घी) became hot then add the remaining Cloves (लौंग) + Green cardamoms (हरी इलायची) + Cinnamon (दालचीनी) +Sliced Onions (कटा हुआ प्याज) and fried it till the onions (प्याज) turn brown. (घी + लौंग + हरी इलायची + दालचीनी + कटा हुआ प्याज को फ्राई करे)

-> After you add Ginger paste (अदरक पेस्ट) + Garlic paste (लहसुन पेस्ट) and fried it for 1 minute. You also add the marinated chicken (मसालेदार चिकन) mix it and cook it on medium flame gas for  5 minute. (इसमें अदरक पेस्ट + लहसुन पेस्ट + मसालेदार चिकन मिला कर पका ले)

-> Now add Chopped Fresh coriander leaves (कटा हुआ ताजा हरा धनिया) mix it. (अब इसमें हरा धनिया मिलाये)

-> Take a deep microwave bowl. Spread a layer of half the rice (चावल) at the base. (माइक्रोवेव बाउल में आधे चावल की सतह बनाये)

-> You sprinkle half the saffron milk (केसर दूध) + Rose petals (गुलाब की पंखुड़िया) + Fresh mint leaves (ताजा पोदीना) + fried Onions (तला हुआ प्याज) + Kewra water (केवरा पानी) + Rose water (गुलाब जल) + Garam masala powder (गरम मसाला पाउडर). (इस पर केसर दूध + गुलाब की पंखुड़िया + ताजा पोदीना + तला हुआ प्याज + केवरा पानी + गुलाब जल + गरम मसाला पाउडर फैलाये)

-> You also spread the chicken gravy (चिकन ग्रेवी) and again spread layers of the remaining rice (चावल) + saffron milk (केसर दूध) + Rose petals (गुलाब की पंखुड़िया) + Fresh mint leaves (ताजा पोदीना) + fried Onions (तला हुआ प्याज) + Kewra water (केवरा पानी) + Rose water (गुलाब जल) + Garam masala powder (गरम मसाला पाउडर). (अब इस पर चिकन ग्रेवी की सतह लगाये और बाद में बचे चावल की सतह + केसर दूध + गुलाब की पंखुड़िया + ताजा पोदीना + तला हुआ प्याज + केवरा पानी + गुलाब जल + गरम मसाला पाउडर फैलाये)

-> Cover it with a cling wrap, make a few holes on it. Cook on Microwave HIGH (100%) for 5 minutes. (बाउल को ढक कर ओवन में पकने ले लिये रख दे)

-> Biryani With Chutney Chicken (बिरयानी चटनी चिकन के साथ) is ready. Served it with raita (रायता) (रायते के साथ परोसे)
