Bottle Gourd Egg Gravy

लौकी अंडा ग्रेवी

Ingredients (सामग्री)

Boiled Eggs (उबले अंडे) ---------- 4

Bottle Gourd (लौकी) ---------- 300 gms

Onion (प्याज) ---------- 2 

Tamarind Paste (इमली पेस्ट) ---------- 1 tablespoon

Jaggery (गुड़) ---------- 1  1/2 tablespoon

Coriander Powder (धनिया पाउडर) ---------- 1/2 smallspoon

Cumin Powder (जीरा पाउडर) ---------- 1/2 smallspoon

Fenugreek seeds (मेथी के दाने) ---------- 10

Green chilli (हरी मिर्च) ---------- 2

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 smallspoon

Chilli Powder (मिर्च पाउडर) ---------- 1/2 smallspoon

Salt (नमक) ---------- To taste

Water (पानी) ---------- 2/3 cup

Coriander leaves (धनिया पत्ते) ---------- 1 tablespoon

Seasoning Ingredients:

Mustard Seeds (सरसों के दाने) ---------- 1/2 smallspoon

Channa Dal (चना दाल) ---------- 1 smallspoon

Urad Dal (उरद दाल) ---------- 2/3 smallspoon

Curry Leaves (करी पत्ती) ---------- 2 spring

Oil (तेल) ---------- 3 tablespoon

How to make Bottle Gourd Egg Gravy (लौकी अंडा ग्रेवी बनाने की विधि)

-> First cut the Boiled Eggs (उबले अंडे) into 3 to 4 slits. (उबले अंडे को काटे)

-> After you shallow fry the Eggs pieces (अंडे के टुकड़े) for 1 minutes in Oil (तेल). And keep aside. (तेल + अंडे के टुकड़े को 1 मिनट तक फ्राई करे)

-> Take a pan heat the Oil (तेल). When Oil (तेल) became hot then add Mustard Seeds (सरसों के दाने) + Channa Dal (चना दाल) + Urad Dal (उरद दाल) + Curry Leaves (करी पत्ती) + Fenugreek seeds (मेथी के दाने) and fry till golden brown color. (तेल + सरसों के दाने + चना दाल + उरद दाल + करी पत्ती + मेथी के दाने को फ्राई करे)

-> After you add Onion (प्याज) + Green chilli (हरी मिर्च) and fried it for 1 minutes. (इसमें प्याज + हरी मिर्च मिला कर फ्राई करे)

-> After you add Coriander Powder (धनिया पाउडर) + Turmeric Powder (हल्दी पाउडर) + Cumin Powder (जीरा पाउडर) and mix it well. (इसमें धनिया पाउडर + हल्दी पाउडर + जीरा पाउडर मिलाये)

-> Now add bottle gourd pieces (लौकी के टुकड़े) and mix it well then only all pieces are coated with powder. (अब इसमें लौकी के टुकड़े को मिलाये और मसालों से कवर करे)

-> Now add Tamarind Paste (इमली पेस्ट) + jaggery powder (गुड़ पाउडर) + Salt (नमक) and mix it well. Add Water (पानी) and pressure cook it for 1 whistle. (इमली पेस्ट+ गुड़ पाउडर + नमक + पानी मिला कर प्रेशर कुकर में पका ले)

-> At last you add Eggs (अंडे) + coriander leaves (धनिया पत्ते) and close the lid for 6 mins.  (अंडे + धनिया पत्ते मिला कर ढक्कन बंद करे)

-> Bottle Gourd Egg Gravy (लौकी अंडा ग्रेवी) is ready. Served it with roti (रोटी), naan (नान), plan rice (सादे चावल). (रोटी, नान, सादे चावल के साथ परोसे)
