Brinjal curry Recipe

 (बैगन करी)

Ingredients For Brinjal (बैगन को मैरीनेट करने के लिये सामग्री)

Yogurt (दही) ----------  3-4 tablespoon

Brinjal (बैगन) ---------- 250 gms

Garam Masala (गरम मसाला) ---------- 1/4 spoon

Oil (तेल) ---------- For fried

Gram Flour (बेसन) ---------- 2 tablespoon

Salt (नमक) ---------- 1/4 spoon

Ingredients  for Curry (करी के लिये सामग्री)


Tomatoes (टमाटर) ---------- 4-5 medium sized

Peanut seeds (छिले मूंगफली दाने) ---------- 2 tablespoon

Fresh Yogurt (ताजा दही) ---------- 1/4 spoon

Turmeric Powder (हल्दी पाउडर) ---------- 1/4 spoon

Coriander Powder (धनियां पाउडर) ---------- 1 spoon

Green Chili (हरी मिर्च) ---------- 1-2

Ginger (अदरक) ---------- 1 inch long pieces

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/4 smallspoon

Salt (नमक) ---------- To taste

Garam Masala (गरम मसाला) ---------- 1/4 smallspoon

Chopped Green Coriander (कटा हरा धनियां) ---------- 2 tablespoon

Oil (तेल) ---------- 2 tablespoon

Asafoetida (हींग) ---------- 1 pinch

Cumin (जीरा) ---------- 1/2 smallspoon

How to make Baigan curry Recipe (बैगन करी बनाने की विधि)


-> First peel the Brinjal (बैगन) and washed it with clean water. After you cuts the Brinjal (बैगन) into big and squar shape. Soak the Brinjal pieces (बैंगन के टुकड़े) into water. (बैगन छिल कर धोये और काटे और पानी में भिगो दे)

-> Now take Yogurt (दही) + Gram Flour (बेसन) + Salt (नमक) + Garam Masala (गरम मसाला) and mixed very well. Now add Brinjal pieces (बैंगन के टुकड़े) and covered Brinjal pieces (बैंगन के टुकड़े) by masale and keep it aside for 20-25 minute.  (दही + नमक + गरम मसाला मिला कर इसमे बैंगन के टुकड़े मिला दे)

-> Now take a fry pan and add Oil (तेल) and put on to gas. When oil became hot then take 1 pieces of Brinjal (बैगन) and pull it into hot Oil (तेल). You can fry more than one Brinjal pieces (बैंगन के टुकड़े) at a time. Fried it until they trun to golden brown in color. (ब्राउन होने तक सारे कोफ्ते तल लीजिये) . Keep all these Brinjal pieces (बैंगन के टुकड़े) on a Npkin Paper. (गरम तेल में बैंगन के टुकड़े तल ले)

For Curry (तरी बनाने के लिए)


-> For make Curry (तरी) first you take Peanut seeds (छिले मूंगफली दाने) + Tomatoes (टमाटर) + Green Chili (हरी मिर्च) + Ginger (अदरक) in a grinder and grind it into mixi and make a smooth paste. Takenout this mixtur in a bowl. (मूंगफली दाने + टमाटर + हरी मिर्च + अदरक पीसे)

-> Heat the Oil (तेल) in a fry Pan. When Oil (तेल) became hot then add Cumin (जीरा) + Asafoetida (हींग) and fried it. Now you add Peanut seeds - Tomatoes Paste (मूंगफली दाने- टमाटर का पेस्ट) + Red Chili Powder (लाल मिर्च पाउडर) and mixed very well. Cooked this until Oil (तेल) are separated from masala. (तेल + जीरा + हींग + प्याज फ़्राइ करे, इसमे + मूंगफली दाने- टमाटर-का पेस्ट + लाल मिर्च पाउडर मिला कर फ़्राइ करे जब तक मसालों के ऊपर तेल न तरने लगे)

-> Now you add Fresh Yogurt (ताजा दही)  and stir it with spoon until masale are cooked. Now you add fried Brinjal pieces (दही + तले हुये बैंगन के टुकड़े मिलाये और पकाये).

-> You can add water (पानी) according to your curry requirement. (अपने अनुसार तरी गाढी या पतली रखने के लिये पानी मिला दे)

-> Now you add Salt (नमक) and cooked it until curry boiled. After slow the gas flame and covered this sabzi by lid (ढक्कन) and cooked the curry for 5-6 minute.(नमक मिला कर पकाये)

-> Off the gas and you add Lime juice (नीबू का रस) + Chopped Green Coriander (कटा हरा धनियां) (गैस बंद करे और नीबू का रस + हरा धनियां मिलाये)

-> Tasty and Delicious Baigan Masala curry Recipe (बैगन मसाला करी) is ready. Served it Rice (चावल), Roti (चपाती) or Parathed (परांठे).(चावल,चपाती, परांठे के साथ परोसे)
