Cheese Moti Pulao

पनीर मोती पुलाव

Ingredients (सामग्री) : 


Cottage cheese (पनीर) ---------- 50 grams

Cooked Basmati rice (पके बासमती चावल) ---------- 3 cups

Cashewnut powder (काजू पाउडर) ---------- 2 tablespoons

Green cardamoms (हरी इलायची) ---------- 6-8

Cloves (लौंग) ---------- 4

Bay leaves (बे पत्ते) ---------- 1

Cinnamon (दालचीनी) ---------- 2 inch sticks

Chopped Fresh mint leaves (कटे पुदीने के पत्ते) ---------- 1 tablespoon

Salt (नमक) ---------- to taste

Cornflour/corn starch (कॉर्न फ्लॉर/ मक्का स्टार्च) ---------- 1 1/2 tablespoons

Oil (तेल) ---------- to deep fry

Ghee (घी) ---------- 2 tablespoons

Ginger-green chili paste (अदरक-हरी मिर्च पेस्ट) ---------- 1 smallspoon

Saffron (केशर) ---------- a few strands

Milk (दूध) ---------- 2 tablespoons

Chopped Fresh coriander leaves (ताजा कटा हरा धनिया)  ---------- 1 tablespoons

Silver warq (स्लिवर वर्क) ----------  2 sheets


How to make Cheese Moti Pulao (पनीर मोती पुलाव बनाने की विधि)


-> First take the Cottage cheese (पनीर) + Cashewnut powder (काजू पाउडर) + Salt (नमक) + Cornflour/corn starch (कॉर्न फ्लॉर/ मक्का स्टार्च) and mixed very well and make a smooth dough. (पनीर + काजू पाउडर + नमक + कॉर्न फ्लॉर/ मक्का स्टार्च मिला कर चिकना मिश्रण बना ले)


-> Divide this mixture into small equal portions and roll into balls. Heat the sufficient Oil (तेल) in Cauldron (कडाही). When Oil (तेल) became hot then deep-fry paneer balls (पनीर की गेंदों), on medium heat, till light golden brown.Take out this into absorbent paper. (मिश्रण को बराबर भागो में बाटे और छोटी छोटी गेंद बनाये, और गरम तेल में सुनहरा होने तक तल ले)


-> Now mixed the Saffron (केशर) into Milk (दूध) and heat in a microwave on HIGH for 30 seconds.  (केसर + दूध को मिला कर ओवन में 30 सेकंड के लिये गरम करे)


-> Now heat the Ghee (घी) in a non-stick pan. When Ghee (घी) became hot then Green cardamoms (हरी इलायची) + cloves (लौंग) + Bay leaves (बे पत्ते) + Cinnamon (दालचीनी) and fired it for 2 minute. (घी + हरी इलायची + लौंग + बे पत्ते + दालचीनी मिला कर फ्राई करे)


-> Now you add Ginger-green chili paste (अदरक-हरी मिर्च पेस्ट) and fried it for 1 minute. Now you add half paneer balls (पनीर की गेंदों) and mixed very well. (अब अदरक-हरी मिर्च पेस्ट मिला कर फ्राई करे और इसमें पनीर की गेंद मिलाये)


-> Now you add Cooked rice (पके चावल) + Saffron Milk (केसर दूध) + Salt (नमक) and mixed lightly. You also add the Chopped Fresh coriander leaves (ताजा कटा हरा धनिया) + 

Chopped Fresh mint leaves (कटे पुदीने के पत्ते) and mixed well. (पके चावल + केसर दूध + नमक + हरा धनिया मिला कर पकाये)


-> You also coat the Coat the remaining paneer balls (पनीर की गेंदों) with Silver warq (स्लिवर वर्क). (बची पनीर की गेंदों को स्लिवर वर्क लगा दे)


-> Tasty Cheese Moti Pulao (पनीर मोती पुलाव) is ready. Before served transfer the pulao into a serving bowl, garnish with silver foil coated paneer balls and serve. (स्लिवर वर्क लगी पनीर की गेंदों से सजाये)




Matar Paneer Recipe (मटर पनीर व्यंजन)
