Chettinad Meen Kuzhambu

चेट्टीनाद मीन कुज्हम्बू

Ingredients (सामग्री)


Fish (मछली) ---------- 1Kg

Small Onion (छोटे प्याज) ---------- 30 

Chopped Tomato (कटा हुआ टमाटर) ---------- 2  

Garlic (लहसुन) ---------- 20 Flakes

Cumin Seeds (जीरा) ---------- 1 smallspoon

Fenugreek (मेथी) ---------- 1 smallspoon

Oil (तेल) ---------- 4 Tablespoon

Fennel Seeds (सौंफ़ बीज) ---------- 1 smallspoon

Curry Leaves (करी पत्ती) ---------- A little

Salt (नमक) ---------- To taste

Tamarind (इमली) ---------- 2 small lemon sized .


Wet grind separately:

 

Kulambu Powder (कुलाम्बू पाउडर) ---------- 3 Tablespoon

Cumin Seeds (जीरा) ---------- 1 smallspoon

Fenugreek (मेथी) ---------- 1 smallspoon

Grated Coconut (कसा हुआ नारियल) ---------- 2 Tablespoon


How to make Chettinad Meen Kuzhambu (चेट्टीनाद मीन कुज्हम्बू बनाने की विधि)

 

-> First take the Kulambu Powder (कुलाम्बू पाउडर) + Cumin Seeds (जीरा) + Fenugreek (मेथी) + Grated Coconut (कसा हुआ नारियल) is a grinder and grind it with little water and make smooth masala paste (मसाला पेस्ट). (कुलाम्बू पाउडर + जीरा + मेथी + कसा हुआ नारियल को थोड़े पानी के साथ पीसे)


-> Soaked the Tamarind (इमली) in 200ml  water and prepare the Tamarind extract (इमली एक्सट्रेक्ट). (इमली को पानी में भिगो कर इमली एक्सट्रेक्ट बना ले)


-> Now heat the Oil (तेल) in a fry pan. When Oil (तेल) became hot then add Cumin Seeds (जीरा) and fried it for few second. Now you add Fennel Seeds (सौंफ़ बीज) + Fenugreek (मेथी) and fried it for 1 minutes.(तेल + जीरा + सौंफ़ बीज + मेथी को फ्राई करे)


-> Now you add Small Onion (छोटे प्याज) + Curry Leaves (करी पत्ती) + Garlic (लहसुन) and fried it for 2 minutes. (छोटे प्याज + करी पत्ती + लहसुन मिला कर फ्राई करे)


-> Now add ground masala paste (पीसा मसाला पेस्ट) + Tamarind extract (इमली एक्सट्रेक्ट) + water (पानी) (if required). Allow it to boil. (अब इसमें पीसा मसाला पेस्ट + इमली एक्सट्रेक्ट + पानी मिला कर पका ले)


-> When gravy (ग्रेवी) boiled then add the Fish pieces (मछली के टुकड़ों) and cooked it on medium flame gas. (जब ग्रेवी उबलने लगे तो इसमें मछली के टुकडे मिला कर पका ले)


-> When Gravy (ग्रेवी) become thicken, remove it from fire. (जब ग्रेवी गाढ़ी हो जाये तो गैस बंद कर दे)


-> Chettinad Meen Kuzhambu (चेट्टीनाद मीन कुज्हम्बू) is ready.
