छोले कुलचे

Ingredients For Chhole (छोले बनाने की सामग्री)


Dry peas (सूखी मटर (मटर)) ---------- 1-1/2 cup

Lemon Juice (नींबू के रस) ---------- 1/4 cup

Amchoor Powder (आम का पाउडर) ---------- 1/2 spoon

Chaat Masala (चाट मसाला) ---------- 2 spoon

Sweet soda powder (मीठा सोडा पाउडर (मीठा सोडा)) ---------- 3 pinch

Salt (नमक) ---------- 1 spoon

Turmeric powder (हल्दी पाउडर) ---------- 1/4 spoon

Chopped Tomatoes (कटा हुआ टमाटर) ---------- 1 cup

Chopped Green Coriander (बारीक कटा हरा धनियां) ---------- 1/2 Cup

Chopped Onion (कटा हुआ प्याज) ---------- 1 cup

Chopped Green Chili (कटी हुयी हरी मिर्च) ---------- 2

Ingredients For Kulche (कुलचे बनाने की सामग्री)


Fine Folur (मैदा) ---------- 100 gms

Yogurt (दही) ---------- 100 gms

Baking Soda (खाने बाला सोडा) ---------- 1 pinch

Onion (प्याज) ---------- 50 gms

Oil (तेल) ---------- 2 spoon

Salt (नमक) ---------- To taste

How to make Chhole (छोले बनाने की विधि)


-> First soaked the Dry peas (सूखी मटर) into water for 6-7 hours. (सूखी मटर को पानी में भिगो कर रखे)

-> Now takenout the Dry peas (सूखी मटर) into the water and add 750 milliliter water (पानी) + Salt (नमक) + Sweet soda powder (मीठा सोडा पाउडर) + Turmeric powder (हल्दी पाउडर) into pressure cooker and Keep boiling. When cooker get 1 whistle then slow the gas flame and cooked the Dry peas (सूखी मटर) for 8-9 minute. (कुकर में  १ सीटी आने पर गैस धीमा कर दीजिये).  (सूखी मटर + पानी + नमक + मीठा सोडा पाउडर + हल्दी पाउडर  को प्रेशर कुकर में पका लो)

-> Now off the gas. When the pressure of the cooker is removed then mashed the Dry peas (सूखी मटर). (प्रेशर खत्म होने पर सूखी मटर मैश करे)

-> Now add Chopped Onion (कटा हुआ प्याज) + Chopped Tomatoes (कटा हुआ टमाटर) + Chopped Green Chili (कटी हुयी हरी मिर्च) + Amchoor Powder (आम का पाउडर) and mixed very well. After you also add the Chaat Masala (चाट मसाला)  + Chopped Green Coriander (बारीक कटा हरा धनियां) and mixed it. (मैश मटर में कटा हुआ प्याज + कटा हुआ टमाटर + कटी हुयी हरी मिर्च + आम का पाउडर + चाट मसाला + बारीक कटा हरा धनियां मिलाये)

-> After you also add the Lemon Juice (नींबू के रस). Your Chhole (छोले) is ready to served with Kulche (कुलचे) (इसमें नींबू का रस मिलाये छोले तैयार है)

How to make Kulche (कुलचे बनाने की विधि)


-> First filtrate (छानना) the Fine-Flour (मैदा) and add Yogurt (दही) + Baking Soda (खाने बाला सोडा) + Salt (नमक) and mixed it and make a smooth daugh. Keep this daugh for 4-5 hours. (मैदा छाने और दही + खाने बाला सोडा + नमक  मिला कर  नरम आटा गूथ ले)

-> Now Divide the dough into equal portions and shape into round small balls. (आटे की छोटी गेंदे बनाये)

-> Now take 1 ball and lighter roll it. After you put the Onion (प्याज) into middle the roti and closed it to all side. Now roll it and make poori sized roti. And put it on hot tava. (लोई को थोडा सा बेले और इमसे प्याज रख कर बंद करे और दुबारा से सूखे आटे की सहायता से पतला - पतला बेल ले) 

-> When roti cooked on one side the change the side of roti. Now with the help of Tongs (चिमटा) cooked the roti on gas.(जब रोटी एक तरफ से सिक जाये तो पलट कर चिमटे से पकड़ कर धीमी आंच पर सेक ले)

-> Hot - hot Kulche (कुलचे) is ready. Before served first spread the Ghee (घी) and served it with Chhole (छोले). (कुलचे पर घी लगा कर छोलो के साथ परोसे)
