Chicken Kadhi

चिकन कढ़ी

Ingredients (सामग्री)

Chicken (चिकन) ---------- 750 grams (1 - 1/2 inch pieces on the bone)

Oil (तेल) ---------- 2-3 tablespoons

Cloves (लौंग) ---------- 4-5

Cinnamon (दालचीनी) ---------- 1 inch stick

Broken Dried red chillies (टूटी सूखी लाल मिर्च) ---------- 3

Cumin seeds (जीरा) ---------- 1 smallspoon

Fenugreek seeds (मेथी दाना) ---------- 1/4 smallspoon

Black peppercorns (काली मिर्च) ---------- 10-12

Yogurt (दही) ---------- 11/2 cups

Gram flour (बेसन) ---------- 11/2 cups

Ginger-garlic-green chilli paste (अदरक-लहसुन-हरी मिर्च पेस्ट) ---------- 1 tablespoon

Red chilli powder (लाल मिर्च पाउडर) ---------- 1 smallspoon

Turmeric powder (हल्दी पाउडर) ---------- 1/2 smallspoon

Sliced finely Onions (कटा हुआ बारीक प्याज) ---------- 2-3 medium

Salt (नमक) ---------- To taste

Finely chopped Fresh coriander leaves (बारीक़ कटा ताजा हरा धनिया) ---------- 2 tablespoons

How to make Chicken Kadhi (चिकन कढ़ी बनाने की विधि)

-> First heat Oil (तेल) in a non stick pan. When Oil (तेल) became hot then add Cloves (लौंग) + Cinnamon (दालचीनी) + Cumin seeds (जीरा) + Broken Dried red chillies (टूटी सूखी लाल मिर्च) + Fenugreek seeds (मेथी दाना)  + Black peppercorns (काली मिर्च) and fried it for 1 minute. (तेल + लौंग + दालचीनी + जीरा + टूटी सूखी लाल मिर्च + काली मिर्च को फ्राई कर ले)

-> After you add Chicken (चिकन) and mix well. Cook and stirring frequently. (इसमें चिकन को अच्छी तरह मिलाये और चलाते रहे)

-> Now filtrate the Gram flour (बेसन) in a bowl. Now you add Yogurt (दही) and Whisk together. You also add the Ginger-garlic-green chilli paste (अदरक-लहसुन-हरी मिर्च पेस्ट) + Red chilli powder (लाल मिर्च पाउडर) + Turmeric powder (हल्दी पाउडर) and mixed very well. (बेसन + दही + अदरक-लहसुन-हरी मिर्च पेस्ट + लाल मिर्च पाउडर + हल्दी पाउडर को आपस मिला ले)

-> You also add 4 - 5 cup water (पानी) and mixed very well. Kadhi mixture is ready (अब इसमें पानी मिलाये, कढ़ी मिश्रण तैयार है)

-> Now you add the Sliced finely Onions (कटा हुआ बारीक प्याज) into cooked Chicken (चिकन) and mixed very well. Cover and cook for 4-5 minutes.(पके चिकन में कटा हुआ बारीक प्याज मिलाये और पकाये)

-> After you add Kadhi mixture (कढ़ी मिश्रण) and mix well. Stir continuously till the kadhi comes to a boil.  After you add Salt (नमक) and mix very well. Cover and cook for 10 - 15 minutes. (अब इसमें  कढ़ी मिश्रण + नमक मिलाये और कढ़ी को पकाये)

-> Chicken Kadhi (चिकन कढ़ी) is ready. Garnished it with chopped fresh coriander leaves (कटा ताजा हरा धनिया) and served it with rice (चावल), pulao (पुलाव). (हरे धनिये से सजाये और चावल + पुलाव के साथ परोसे)
