Chicken Korma

चिकन कोरमा 

Ingredients (सामग्री)

Chicken pieces (चिकन के टुकड़े) ---------- 400 gms

Almond paste (बादाम पेस्ट) ---------- 1 tablespoon

Lemon juice (नींबू का रस) ---------- 1 tablespoon

Black pepper powder (काली मिर्च पाउडर) ---------- 1/2 smallspoon

Garlic paste (लहसुन पेस्ट) ---------- 1 smallspoon

Oil (तेल) ---------- 2-3 tablespoon

Finely chopped onion (सूक्ष्मता कटा हुआ प्याज) ---------- 1

Turmeric powder (हल्दी पाउडर) ---------- 1/4 smallspoon

Sour curd (खट्टा दही) ---------- 150 ml

Chopped green chilli (कटी हुई हरी मिर्च) ---------- 1 smallspoon

Cardamom (इलायची) ---------- 4

Cloves (लौंग) ---------- 3

Cinnamon (दालचीनी) ---------- 2 medium sized

Bay leaf (कड़ी पत्ता) ---------- 1

Garam masala (गरम मसाला) ---------- 1/2 smallspoon

Chopped green coriander (कटी हुई हरी धनिया) ---------- 1 tablespoon

Roasted chopped almonds (भुना और कटा हुआ बादाम) ---------- 1/2 tablespoon

Salt (नमक) ---------- To taste

How to make Chicken Korma ( चिकन कोरमा बनाने की विधि)

-> First take the Lemon juice (नींबू का रस) + 1 pinch Salt (नमक) + Black pepper powder (काली मिर्च पाउडर) + Garlic paste (लहसुन पेस्ट) and mixed it in a bowl. (नींबू का रस + नमक + काली मिर्च पाउडर + लहसुन पेस्ट को आपस में मिला ले)

-> Now rub the mixture thoroughly to the Chicken pieces (चिकन के टुकड़े) and keep it aside for 1/2 an hour. (इस मिश्रण में चिकन के टुकड़े मिला कर रखे)

-> Now take a heavy bottom pan and heat the Oil (तेल). When Oil (तेल) became hot then add Finely chopped onion (सूक्ष्मता कटा हुआ प्याज) and fried it until it turn to golden brown in color. (तेल + प्याज को फ्राई करे)

-> After you add Turmeric powder (हल्दी पाउडर) and mixed it. Cool the onion (प्याज). (इसमें हल्दी पाउडर मिला दे और प्याज को ठंडा करे)

-> After grind the fried onion (तला हुआ प्याज) + Sour curd (खट्टा दही) + Almond (बादाम) + Chopped green chilli (कटी हुई हरी मिर्च)  into grinder and make a smooth paste. (भुना प्याज + खट्टा दही + बादाम + कटी हुई हरी मिर्च को पीस ले)

-> Pour this mixture on the marinated Chicken pieces (मसाले लगे चिकन टुकड़े). (इस मिश्रण को मसाले लगे चिकन टुकडो पर डाले)

-> Again heat the Oil (तेल) in a fry pan. When Oil (तेल) became hot then add Cardamom (इलायची) + Cloves (लौंग) + Cinnamon (दालचीनी) + Bay leaf (कड़ी पत्ता) and fried it for 30 second. (तेल + इलायची + लौंग + दालचीनी + कड़ी पत्ता को फ्राई करे)

-> After you add marinated Chicken pieces (मसाले लगे चिकन टुकड़े) + Salt (नमक) and mixed  very well and cook on low flame while stirring occasionally till it boils. Cover the pan with a lid and let it simmer till the chicken is cooked properly. (इसमें मसाले लगे चिकन टुकड़े + नमक मिला कर चिकन को अच्छी तरह ढक कर पका ले)

-> Now you add Garam masala (गरम मसाला) + Chopped green coriander (कटी हुई हरी धनिया) and mixed it. Off the gas. (अब इसमें गरम मसाला + कटी हुई हरी धनिया मिलाये और गैस बंद कर दे)

-> Tasty and Spicy Chicken Korma ( चिकन कोरमा) is ready. Garnish with roasted Roasted chopped almonds (भुना और कटा हुआ बादाम). (भुने और कटा बादाम से सजाये)
