Dahi Wada Recipe

दही बड़ा

Ingredients (सामग्री)


Split Black Gram (split without skin)(धुली उरद की दाल) ---------- 250 gms

Yogurt (दही) ---------- 1 kg

Salt (नमक) ---------- to taste

Roasted cumin (भुना जीरा) ---------- 1 spoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1 smallspoon

Oil (तेल) ---------- For fried

Asafoetida (हींग) ---------- 1-2 pinch

Chopped Cashewnut ( कटे काजू) ---------- 1 spoon

Raisins (किशमिश) ---------- 1 spoon


How to make Dahi Wada Recipe (दही बड़ा बनाने की विधि)


-> First washed the Split Black Gram (split without skin)(धुली उरद की दाल) with water and soak it into water for 3-4 hours. (धुली उरद की दाल धो कर पानी में भिगो दे) 


-> Taken out the daal into the water and grind it into grinder.(दाल हल्की दरदरी सी पीसे)


-> Now mixed the Asafoetida (हींग) into 1 spoon water and mixed in daal. You also add 1/4 spoon Salt (नमक) into daal. Fant the daal very well. (दाल में हींग घोल + नमक  मिला दें. और दाल फेंट ले)


-> Now take a fry pan and add Oil (तेल) and put on to gas. When oil became hot then take some portion into the daal mixture and roll it. Now with help of palm (हथेली) flat (चपटा) this roll and add 2-3 pieces  of Cashewnuts (काजू) + 3-4 Raisin (किशमिश). Now take the all side and closed it and make a small sized ball.  (दाल के मिश्रण से थोड़ा मिश्रण लेकर २-३ काजू के टुकड़े और २-३ किशमिश रख कर और बन्द कर के गोल और चपटा कर ले)


-> You can fry more than one Wada (बड़ा ) at a time. Fried it until they turn  to golden brown in color. Keep all these Wada (बड़ा )on a Napkin Paper. (ब्राउन होने तक सारे बड़े तल लीजिये(


-> Make all these  Wada (बड़ा ) same type.


Before eat to Dahi Wada (दही बड़ा )


Before eat to Dahi Wada (दही बड़ा ), soak the Wada (बड़ा ) into water for 1/2 hours. After takenout the Wada (बड़ा ) into the water and remove excess water by pressing with the palm. Taken this Wada (बड़ा ) into plate. Now you add Yogurt (दही) + Salt (नमक) + Roasted cumin (भुना जीरा) + Red Chili Powder (लाल मिर्च पाउडर) + Tamarind sauce (इमली की चटनी) and served it. (खाने से आधा घंटे पहेले बड़े को पानी में भिगो कर रख दे ! अब एक बड़ा पानी से निकालिये और हथेली से दबाकर अधिक पानी को निकाल दें और प्लेट में रखे ! फैटी हुयी दही में थोडा सा नामक मिला कर दही बड़ो के ऊपर डाल दे ! फिर इसमें भुना हुआ जीरा + लाल मिर्च + इमली की चटनी डाल दे
