Dum Aloo Recipe (दम आलू व्यंजन )

Ingredients ( सामग्री):


Small Potatoes (आलू) ---------- 1/2 kg

Small Tomato (टमाटर ) ----------- 3-4

Turmeric Powder  (हल्दी पाउडर) ----------- 1/2 tsp 

Chilli powder( मिर्च पाउडर ) ----------- 1/2 tsp

Onion (प्याज) -----------  2 pices

Ginger paste (पिसा अदरक) ----------- 1/2  tsp

Fresh Curd ( ताजा दही)  ----------- 2 cup

Garlic paste( पिसा लहसुन) ----------- 1/2  tsp

Ghee or oil (घी और तेल)  ----------- 4  tsp

Milk (दूध)  ----------- 1/2 Cup

Asfoetida (हींग )

Salt (नमक) to taste

 


For Masala : 


Coriander (धनिया) ----------- 1 tbsp

Black Peppers ( काली मिर्च) ------------  6-7

Caraway (जीरा) -----------  1/4 tsp 

Cloves (लौंग) ----------- 3-4

Cinnamon (दालचीनी) ----------- 1 small pice



How to make Dum Aloo (दम आलू बनाने की विधि)


-> Fist boil the Potatoes (आलू) with salty water and peel the potatoes (आलू) and prick all over with a fork. (नमकीन पानी मे आलू उबाले, छिले और कांटा की सहायता से छेदे)


-> Heat the oil (तेल) and fry the potatoes on mediam heat, until golden brown.Keep it aside. (गरम तेल में आलू तल ले)


-> Blending Coriander (धनिया) + Black Peppers (काली मिर्च) + Caraway (जीरा) + Cloves (लौंग) + Cinnamon (दालचीनी) keep it aside. And Blending the Tomato (टमाटर). धनिया +  काली मिर्च + जीरा + लौंग + दालचीनी पीसे और टमाटर अलग पीसे)


-> In fry pan add ghee or oil (घी और तेल) and fry onion (प्याज) + Asfoetida (हींग) + Tomato Paste (टमाटर पेस्ट) + Ginger paste(पिसा अदरक) + Garlic paste(पिसा लहसुन). Fry this mixture untill the paste turns reddish brown. Add mixture blending masala and fry its 2-3 minute. (तेल + प्याज + हींग + टमाटर पेस्ट + पिसा अदरक + पिसा लहसुन फ़्राइ करे)


-> After include Turmeric Powder  ( हल्दी पाउडर) + Chilli powder( मिर्च पाउडर) + Salt (नमक) and again fry it. (इसमे हल्दी पाउडर + मिर्च पाउडर + नमक डाले)


-> Now add Milk (दूध) and Fresh Curd ( ताजा दही) for gravy(तरी) and Stirring continuously (लगातार चलाते), add water if the gravy(तरी) appears too thick. (दूध + ताजा दही मिलाकर लगातार चलाते हुये पकाये)


-> Add Potatoes (आलू) to this gravy(तरी) and cook it  5-6 minute. (आलू डाल कर पकाये)


-> Garnish it with fresh coriander leaves(हरे धनिये) (हरे धनिये से सजाये)




Gujarati Kadhi

 (गुजराती कढ़ी)

Ingredients (सामग्री)

Slightly sour yogurt (थोड़ी खट्टी दही) ---------- 400 gms or 2 cup

Salt (नमक) ---------- to taste
