Eggplant Curd Gravy

बैंगन दही ग्रेवी

Ingredients (सामग्री)


Eggplant (बैंगन) ---------- 250 gms

Curd (दही) ---------- 1/2 cup

Ginger garlic paste (अदरक लहसुन पेस्ट) ---------- 1 smallspoon

Garam masala powder (गरम मसाला पाउडर) ---------- 1/2 smallspoon

Cumin powder (जीरा पाउडर) ---------- 1 smallspoon

Coriander powder (धनिया पाउडर) ---------- 1/2 smallspoon

Chilli powder (मिर्च पाउडर) ---------- 1 smallspoon

Onion (प्याज) ---------- 1 big in sized.

Grated Coconut (कसा हुआ नारियल) ---------- 1/4 cup

Turmeric powder (हल्दी पाउडर) ---------- 1/2 smallspoon

Asafoetida (हींग) ---------- a pinch

Coriander leaves (धनिया पत्ते) ---------- a few

Cinnamon (दालचीनी) ---------- a stick

Ginger (अदरक) ---------- a small piece

Poppy seed (खसखस) ---------- 1 smallspoon

Peppercorns (काली मिर्च) ---------- 8

Garlic (लहसुन) ---------- 4 pods

Green chilli (हरी मिर्च) ---------- 6

Salt (नमक) ---------- To taste

Oil (तेल) ---------- As required


How to make Eggplant Curd Gravy (बैंगन दही ग्रेवी बनाने की विधि)


-> First Cut Eggplant (बैंगन) into lengthwise pieces. And Finely chopped the Onion (प्याज). (बैंगन को लम्बाई में काटे और प्याज को बारीक़ काटे)


-> In a bowl take Curd (दही) + Ginger garlic paste (अदरक लहसुन पेस्ट)  + Cumin powder (जीरा पाउडर) + Chilli powder (मिर्च पाउडर)  + Coriander powder (धनिया पाउडर) + Garam masala powder (गरम मसाला पाउडर) and mix well. (दही में अदरक लहसुन पेस्ट + जीरा पाउडर + मिर्च पाउडर + धनिया पाउडर + गरम मसाला पाउडर को मिलाये)


-> Now Grind Grated Coconut (कसा हुआ नारियल) + Cinnamon (दालचीनी) + Ginger (अदरक) + Poppy seed (खसखस) + Peppercorns (काली मिर्च) + Garlic (लहसुन) + Green chilli (हरी मिर्च) in a grinder and make a smooth paste. (कसा हुआ नारियल + दालचीनी + अदरक + खसखस + काली मिर्च + लहसुन + हरी मिर्च को पीस कर पेस्ट बना ले)


-> Heat Oil (तेल) in a fry pan. When Oil (तेल) became hot then fry the Eggplant (बैंगन) and set aside. (तेल में बैंगन फ्राई करे)


-> In remain Oil (तेल) fry the Onion (प्याज) for 1 minutes. Now you add Coconut mixture (नारियल का मिश्रण) fry till the raw smell subsides. (तेल + प्याज + नारियल का मिश्रण को फ्राई करे)


-> Now add Turmeric powder (हल्दी पाउडर) + Asafoetida (हींग) + curd mixture (दही मिश्रण) + Salt (नमक) and cook, adding water if needed. (अब इसमें हल्दी पाउडर + हींग + दही मिश्रण + नमक को मिला कर पका ले)


-> When Gravy (ग्रेवी) have boiled well then add fried eggplant pieces (तले बैंगन के टुकड़े) and cook for 5 minutes. (जब ग्रेवी में उबाल आ जाये तो इसमें तले बैंगन के टुकड़े मिलाये और पकाये)


-> Eggplant Curd Gravy (बैंगन दही ग्रेवी) is ready. Garnished it with Coriander leaves (धनिया पत्ते) and served hot. (धनिया पत्ते से सजाये)
