Fish Biryani

मछली बिरयानी

Ingredients (सामग्री)

Fish vanjaram (वन्जरम मछली) ---------- 4 pieces

Basmati rice (बासमती चावल) ---------- 2 cups

Onion ( प्याज) ---------- 3 large in sized

Tomato (टमाटर) ---------- 4

Green chilli (हरी मिर्च) ---------- 3

Garam masala powder (गरम मसाला पाउडर) ---------- 1 smallspoon

Curd (दही) ---------- 1/2 cup

Chilli powder (मिर्च पाउडर) ---------- 1 smallspoon

Coriander leaves (धनिया पत्ते) ---------- a handful

Mint leaves (पुदीने के पत्ते) ---------- a handful

Ghee (घी) ---------- 1/4 cup

Ginger garlic cinnamon paste (अदरक लहसुन दालचीनी पेस्ट) ---------- 4 smallspoon

Fennel (सौंफ) ---------- 1 smallspoon

Tej Patta (तेज पत्ता) ---------- 1

Salt (नमक) ---------- to taste 

Oil (तेल) ---------- as needed

How to make Fish Biryani (मछली बिरयानी बनाने की विधि)

-> First cut the Onion (प्याज), Tomato (टमाटर), Green chilli (हरी मिर्च) into thin long slices. (प्याज, टमाटर, हरी मिर्च को लम्बे और पतले टुकड़ो में काटे)

-> Now take the fish (मछली) and smear the Garam masala powder (गरम मसाला पाउडर) + Chilli powder (मिर्च पाउडर) + Salt (नमक) over the fish (मछली) and set aside. (मछली के ऊपर गरम मसाला पाउडर + मिर्च पाउडर + नमक लगाये और अलग रख दे)

-> Now heat Oil (तेल) in a frying pan. When Oil (तेल) became hot then fry the fish pieces (मछली के टुकड़े) until it turn to light brown in color. When they cool then cut into small pieces. (तेल + मछली के टुकड़े को फ्राई करे और ठंडा होने पर छोटे टुकड़ो में काटे)

-> Soak Basmati rice (बासमती चावल) in water (पानी) and set aside for half an hour. (बासमती चावल को पानी में भिगो कर रखे)

-> Now heat Oil (तेल) in a large pan. When Oil (तेल) became hot then add Fennel (सौंफ) + Tej Patta (तेज पत्ता) +  Onion (प्याज) + Green chilli (हरी मिर्च) and fried it until Onion (प्याज) turn to golden brown in color. (तेल + सौंफ + तेज पत्ता + प्याज + हरी मिर्च को फ्राई करे)

-> Now you add Ghee (घी) + Mint leaves (पुदीने के पत्ते) + Coriander leaves (धनिया पत्ते) and fry for a few minutes. (अब इसमें घी + पुदीने के पत्ते + धनिया पत्ते मिला कर फ्राई करे)

-> Now you add Ginger garlic cinnamon paste (अदरक लहसुन दालचीनी पेस्ट) + Curd (दही) + Tomato (टमाटर) + Salt (नमक) and fried it for 2 minute. (अब इसमें अदरक लहसुन दालचीनी पेस्ट + दही + टमाटर + नमक मिला कर पका ले)

-> Now add rice (चावल) and mix it and cover the pan with a lid and cook. (अब इसमें चावल मिलाये और ढक कर पकाये)

-> When rice (चावल) is cooked, add fish pieces (मछली के टुकड़े), stir well, keep on 'dhum' for 10 minutes and switch off the gas. (जब चावल पक जाये तो इसमें मछली के टुकड़े मिलाये और धूम पर 10 मिनट रखे)

-> Fish Biryani (मछली बिरयानी) is ready. Served hot.
