Fried Kurkuri Arbi

(तली हुयी कुरकुरी अरबी)

Ingredients (सामग्री)

Colocasia (अरबी) ---------- 500 gms

Carom Seeds (अजवायन) ---------- 1 small spoon

Cumin (जीरा) ---------- 1/2 small spoon

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 spoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/2 small spoon

Garam Masala (गरम मसाला) ---------- 1/2 small spoon

Chopped Green Coriander (कटा हरा धनियां) ---------- 2 tablespoon

Amchoor Powder (अमचूर पाउडर) ---------- 1/2 spoon

Salt (नमक) ---------- To taste

Coriander Powder (धनियां पाउडर) ---------- 2 small spoon

Asafoetida (हींग) ---------- 1-2 pinch

Chopped Green Chili (बारीक कटी हरी मिर्च) ---------- 2-3

Grated Ginger (कद्दुकस किया अदरक) ---------- 1 spoon

Oil (तेल) --------------- For fry the Colocasia (अरबी) and cooked the Colocasia (अरबी)

How to make Fried Kurkuri Arbi (तली हुयी कुरकुरी अरबी बनाने की विधि)

-> First washed the Colocasia (अरबी) with clean water. Boiled the Colocasia (अरबी) in pressure cooker. (अरबी धो कर प्रेशर कुकर में उबाले)

-> When cooker gives the 1 Whistle (सीटी) then off the gas. When boiled Colocasia (उबली अरबी) became cool then peel it with help of palm (हथेली) flat (चपटा) the boiled Colocasia (उबली अरबी).(अरबी ठंडी होने पर छिले और हथेली से दबा कर चपटा करे)

-> Now heat the Oil (तेल) in fry pan. When Oil (तेल) became hot then fried the 4-5 boiled Colocasia (उबली अरबी) and fried it until they trun to golden brown. Takenout these in a plate. Similar type fried all boiled Colocasia (उबली अरबी). (गरम तेल गरम उबली अरबी तल ले)

-> Now in other fry pan heat 1 tablespoon Oil (तेल). When Oil (तेल) became hot then add Cumin (जीरा) + Asafoetida (हींग) + Carom Seeds (अजवायन) and fried it.After you add Turmeric Powder (हल्दी पाउडर) + Coriander Powder (धनियां पाउडर) + Chopped Green Chili (बारीक कटी हरी मिर्च) + Grated Ginger (कद्दुकस किया अदरक) and fried it for 2-3 minute. (तेल + जीरा + अजवायन + हींग + हल्दी पाउडर + धनियां पाउडर + कटी हरी मिर्च  + अदरक फ़्राइ करे)

-> Now you add fried Colocasia (तली अरबी) + Salt (नमक) + Red Chili Powder (लाल मिर्च पाउडर) + Amchoor Powder (अमचूर पाउडर) + Garam Masala (गरम मसाला) and mixed well. Now cooked the Colocasia (अरबी) for 3-4 minute. Now off the gas and you add Chopped Green Coriander (कटा हरा धनियां). (इसमे तली अरबी + नमक + लाल मिर्च पाउडर + अमचूर पाउडर + गरम मसाला मिलाकर पकाये)

-> Your Fried Kurkuri Arbi (तली हुयी कुरकुरी अरबी) is ready. Served it with Rotil (चपाती), Naan (नान), Paratha (परांठे) (तैयार अरबी चपाती, नान, परांठे से परोसे)
