Gajar Halwa With Pistachio Coulis (गाजर हलवा पिस्ता कुलिस के साथ )

Ingredients (सामग्री):

Carrots (गाजर) --------------------------------------- 8-10 medium
Pure ghee (शुद्ध घी) --------------------------------------- 1/4 cup
Milk (दूध) --------------------------------------- 4 cups
Green cardamom powder (हरी इलायची पाउडर) ---------------------------------------  1/2 teaspoon
Milk solids (खोया , मावा ) -------------------------------------- 1/2 cup
Sugar (चीनी ) --------------------------------------  3/4 cup
Blanched and Sliced Almonds(कटे बादाम)  --------------------------------------  8-10
Silver warq (चांदी वर्क) -------------------------------------- 1 sheet


Pistachios (पिस्ता) --------------------------------------  1/2 cup
Sugar (चीनी ) /honey (शहद) --------------------------------------  3 tablespoons
Fresh cream  (ताजा क्रीम)  --------------------------------------  1/4 cup

  • Heat three tablespoons ghee (घी) in a thick-bottomed pan and add carrots (गाजर) and cook for 5- 6 minutes.
  • Now add milk (दूध) + Green cardamom powder (हरी इलायची पाउडर) and cook on medium heat for fifteen to twenty minutes or until the milk evaporates and the carrots (गाजर) are cooked.
  • Now add Milk solids (खोया , मावा ) + Sugar (चीनी ) and and cook for  3- 4 minutes stirring continuously.


For pistachio coulis

  • Soak the Blanch pistachios (सफेद पिस्ता) in two cups of hot water for five minutes. Drain, cool, peel and puree them in a blender.
  • Now take puree in a pan and add Sugar (चीनी ) /honey (शहद)  +  Fresh cream  (ताजा क्रीम) and cook.
  • Once the mixture comes to a boil, low heat and simmer for five minutes or until the mixture thickens to a sauce consistency
  • To serve, place a portion of gajar halwa on a plate.
