Gajar ki Kanji (गाजर की कांजी )

Ingredients (सामग्री):

Carrots (गाजर) ---------- 4 large

Beetroot (चुकंदर) ---------- 1 medium

Salt (नमक) ---------- 3 tsp

Coarse Red chilli powder (मोटा लाल मिर्च पाउडर) ---------- 1 1/2 tsp

Coarse Mustard powder (मोटा सरसों पाउडर) ---------- 4 tsp

How to make Gajar ki Kanji (गाजर की कांजी बनाने की विधि) :

-> Scrub carrots (गाजर) and beetroot (चुकंदर) and wash under running water. Peel and cut into batons. (गाजर + चुकंदर धो कर काटे)

-> Now take carrots (गाजर) + beetroot (चुकंदर) batons in a bowl. (गाजर + चुकंदर कद्दूकस करे)

-> Add salt (नमक) + coarse red chilli powder (मोटा लाल मिर्च पाउडर) + coarse mustard powder ((मोटा सरसों पाउडर) and mix it. (नमक + मोटा लाल मिर्च पाउडर + मोटा सरसों पाउडर मिलाये)

-> Add eighteen cups of water and stir. (पानी मिला कर चलाये)

-> Cover the bowl with a muslin cloth and tie it round the rim and stand in the sun for 3 - 4 days. ( 3-4  दिन कपडे से ढक कर रखे)

-> When it ready chill in the refrigerator and serve chilled. (तैयार  पर ठंडा करके परोसे)
