Gatte Aur Tamatar Ka Pulao

गट्टे और टमाटर का पुलाव

Ingredients (सामग्री):

For Gatte (गट्टे के लिए)

Gram flour (बेसन) ---------- 1 cup

Yogurt (दही) ---------- 2 tablespoons

Garam masala powder (गरम मसाला पाउडर) ----------  1/4 smallspoon

Asafoetida (हींग) ---------- a pinch

Baking soda (पाक सोडा) ---------- a pinch

Chopped Ginger (कटा अदरक) ---------- 1/2 smallspoon

Red chili powder (लाल मिर्च पाउडर) ---------- 1/4 smallspoon

Ghee (घी) ---------- 1 tablespoon

Mint leaf (पुदीना पत्ती) ---------- a few

Salt (नमक) ---------- to taste

For Pulao (पुलाव के लिए)

Basmati rice (बासमती चावल) ---------- 1 1/2 cups

Cumin seeds (जीरा) ---------- 1 smallspoon

Bay leaf (बे पत्ती) ---------- 1

Ginger (अदरक) ---------- 1 inch piece

Garlic (लहसुन) ---------- 3-4 cloves

Chopped Tomato (कटा हुआ टमाटर) ---------- 1 medium

Coriander powder (धनिया पाउडर) ---------- 2 tablespoons

Red chili powder (लाल मिर्च पाउडर) ---------- 2 tablespoons

Turmeric powder (हल्दी पाउडर) ---------- 1/4 smallspoon

Ghee (घी) ---------- 3 smallspoon

Cinnamon (दालचीनी) ---------- 2 stick

Green cardamoms (हरी इलायची) ---------- 3-4

Black cardamom (काली इलायची) ---------- 1

Cloves (लौंग) ---------- 3-4

How to make Gatte Aur Tamatar Ka Pulao (गट्टे और टमाटर का पुलाव बनाने की विधि)

For Gatte (गट्टे के लिए)

-> First filtrate the Gram flour (बेसन) in a bowl. (बेसन को छाने)

-> Now you add Yogurt (दही) + Salt (नमक) + Baking soda (पाक सोडा) + Chopped Ginger (कटा अदरक) + Red chili powder (लाल मिर्च पाउडर) + Garam masala powder (गरम मसाला पाउडर) + Asafoetida (हींग) + 1 tablespoon Ghee (घी) mixed very well. (दही + नमक + पाक सोडा + कटा अदरक + लाल मिर्च पाउडर + गरम मसाला पाउडर  + हींग + घी बेसन में मिलाये ) 

-> Now add chopped Mint leaf (पुदीना पत्ती) and mixed very well. Now with the help of sufficient water make a stiff dough. (अब पुदीना पत्ती मिलाये और पानी की सहायता से कड़ा आटा तैयार कर ले)

-> Now Divide this dough into equal portions and roll each portion into cylinders. (आटे को बराबर भाग में बाटे और लम्बा रोल बना ले)

-> Now Boil sufficient water in a deep non stick pan, put the roll into the pan and cook till they rise to the top. Drain well. Cool and cut into small pieces. (पानी उबाले और इसमें गट्टे डाल कर पकाये, जब गट्टे पक जाये तो इनको पानी से निकाल ले और ठंडा कर के टुकडो में काट ले)

-> Gatte (गट्टे) is ready.

-> First take Ginger (अदरक) + Garlic (लहसुन) + Chopped Tomato (कटा हुआ टमाटर) in a grinder and grind it. (अदरक+लहसुन+कटा हुआ टमाटर को पीस ले)

-> Now heat the 3 smallspoon Ghee (घी) in a another deep non stick pan. When Ghee (घी) became hot then add Cinnamon (दालचीनी) + Green cardamoms (हरी इलायची) + Black cardamom (काली इलायची) + Cloves (लौंग) + Cumin seeds (जीरा) +  Bay leaf (बे पत्ती) and fried it for 1 minute. (घी + दालचीनी + हरी इलायची + काली इलायची + लौंग + जीरा + बे पत्ती को फ्राई करे)

-> Now you add Gatte (गट्टे) and roast it for 2 minute. After you add Ginger-Garlic-Tomato Paste (अदरक-लहसुन-टमाटर पेस्ट) and cooked it for 1 minute. After you add Coriander powder (धनिया पाउडर) + Red chili powder (लाल मिर्च पाउडर) + Turmeric powder (हल्दी पाउडर) + Salt (नमक) and cooked for it 1-2 minute. (इसमें गट्टे + अदरक-लहसुन-टमाटर पेस्ट + धनिया पाउडर + लाल मिर्च पाउडर + हल्दी पाउडर + नमक मिला कर पकाये)

-> Now drain rice (चावल) and add it into pan and mixed very well. Now you add the 2½ cups water (पानी) and mixed well. When the water comes to a boil, cover the pan, reduce heat and cook till the rice is done. (चावल पानी में से निकाल कर इसमें मिलाये और पानी मिला कर पकाये)

-> Tasty and yummy Gatte Aur Tamatar Ka Pulao (गट्टे और टमाटर का पुलाव) is ready and served it hot.
