Gatte Ki Kadhi

गट्टे की कढ़ी

Ingredients For Gatte  (गट्टे के लिये सामग्री)

Gram Flour (बेसन) ---------- 1-1/4 Cup

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/2 spoon

Salt (नमक) ---------- to taste

Turmeric powder (हल्दी पाउडर) ---------- 1/4 smallspoon

Yogurt (दही) ---------- 3 tablespoon

Oli (तेल) ---------- 3 tablespoon

Soda (खाने का सोडा) ---------- 2 pinch

Ingredients For Kadhi (कढ़ी के लिये सामग्री)

Yogurt (दही) ---------- 1 cup

Gram Flour (बेसन) ---------- 1 tablespoon

Turmeric powder (हल्दी पाउडर) ---------- 1/4 spoon

Onion (प्याज) ---------- 1

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/2 spoon

Coriander Powder (धनियां पाउडर) ---------- 1 spoon

Salt (नमक) ---------- to taste

Oil (तेल) ---------- 2 tablespoon

Cumin (जीरा) ---------- 1 spoon

Mustard seeds (राइ) ---------- 1/2 spoon

Asafoetida (हींग) ---------- 2 pinch

Whole red pepper (साबुत लाल मिर्च) ---------- 4

Bay Leaf (तेज्पता) ---------- 1

Green Coriander (हरा धनियां) ---------- 1 tablespoon

How to make Gatte Ki Kadhi (गट्टे की कढ़ी बनाने की विधि)

For Gatte (गट्टे बनाने के लिये)

-> First filtrate the Gram Flour (बेसन) in big pot and add Oli (तेल) + Turmeric powder (हल्दी पाउडर) + Red Chili Powder (लाल मिर्च पाउडर) + Yogurt (दही) + Salt (नमक) + Soda (खाने का सोडा) and mixed very well. (बेसन छाने और इसमे तेल + हल्दी पाउडर + लाल मिर्च पाउडर + दही + नमक + खाने का सोडा मिलाये)

-> Now with the help of Lukewarm water make a smooth dough. Just like dough of paratha. (गुनगने पानी की सहायता से परांठे जैसा आटा गूंथ ले)

-> Now take some portion in this dough and make a 4 inch long and 3/4 inch diameter roll. Make all rolls like this in sized.(थोडा आटा ले कर बेलनाकार आकृ्ति के रोल बना ले)

-> Now take 4 cup water (पानी) into pot and boiled it. When water became boiled then add the Gram Flour rolls (बेसन के रोल) and boiled it for 15 minute. After you off the gas. Now with the help of Tongs (चिमटा) taken out all rolls into plate and we can used its water for make Kadhi.(पानी मे बेसन के रोल उबाले और बचा पानी कढ़ी में काम आ जायेगा)

-> When Gram Flour rolls (बेसन के रोल) became cool then cuts it into 1/2 inch long pieces. Gatte (गट्टे) is ready. (गट्टे ठंड़े होने पर काटे)

For Kadhi (कढ़ी बनाने के लिये)

-> First mixed the Gram Flour (बेसन) into Yogurt (दही) and mixed very well. Now you add Turmeric powder (हल्दी पाउडर) + Red Chili Powder (लाल मिर्च पाउडर) + Coriander Powder (धनियां पाउडर) + 3 Cup water (पानी) and mixed very well. (बेसन + दही + हल्दी पाउडर + लाल मिर्च पाउडर + धनियां पाउडर + पानी मिलाये)

-> Now take the 2 tablespoon Oil (तेल) into fry pan and heat it. When Oil (तेल) became hot then add Cumin (जीरा) + Mustard seeds (राइ) + Asafoetida (हींग) and fried it for 30 second. Now you add Whole red pepper (साबुत लाल मिर्च) anf fried it. (तेल + जीरा + राइ + हींग + साबुत लाल मिर्च फ़्राइ करे )

-> Now you add Bay Leaf (तेज्पता) + Onion (प्याज) and fried it until Onion (प्याज) trun to golden brown in color. (इसमे तेज्पता+ प्याज डाल कर फ़्राइ करे )

-> After you add Gram Flour (बेसन) + Yogurt (दही)  mixture. Cooked it 2-3 minute on high flame gas. When it comes to boil then slow the gas flame. Now you add Salt (नमक) and cooked it. (इसमे बेसन+दही मिश्रण + नमक मिलाये और पकाय़े)

-> Now you add Gatte (गट्टे) and cooked the Kadhi (कढ़ी) for 25-30 minute and off the gas. Now you add Green Coriander (हरा धनियां) (गट्टे कढ़ी मे डाल कर पकाय़े)

-> Your Gatte Ki Kadhi (गट्टे की कढ़ी) is ready. Served it with Naan (नान), Parathe (परांठे), Roti (चपाती) or Rice (चावल).(नान+परांठे+चपाती+चावल के साथ परोसे)
