Ghevar Recipe

Ingredients (सामग्री)

Fine-Flour (मैदा) ---------- 300 gms or 3 cup

Ghee (घी) ---------- 50 gms or 1/4 cup

Milk (दूध) ---------- 100 gms or 1/2 cup

Water (पानी) ---------- 300 gms or 1-1/2 cup

Eaten yellow color (पीला खाने बाला रंग) ---------- 1/4 spoon

Ghee (घी) ---------- For fried the Ghevar (घेवर तलने के लिये)

For sweet Syrup (चाशनी के लिये)

Sugar (चीनी) ---------- 300 gms or 1-1/2 cup

Water (पानी) ---------- 200 gms or 1 cup

How to make Ghevar (घेवर बनाने की विधि)

For make the sweet Syrup (चाशनी बनाने की विधि)

-> For this we have to make syrup of 2-wire. (२ तार की चाशनी बनाये)

-> Now take Sugar (चीनी) + Water (पानी) and boiled this for 6-7 minute and make a  sweet Syrup. Now take 1 spoon sweet Syrup and put it on plate and after cooling keep the paste between your finger and thumb you will see 2-3 strings become, its mean sweet Syrup is ready. If it does not, then again you cooked it for 2-3 minute and again check it. (चीनी + पानी को पकाए और २ तार की चाशनी बनाये)

For make Ghevar (घेवर बनाने की विधि)

-> First  filtrate (छानना) the Fine flour (मैदा). (मैदा छाने)

-> Now in other Pot take 50 gms Ghee (घी)  + Milk (दूध) and mixed very well. After you add Fine flour (मैदा) and mixed it. (घी + दूध + मैदा को मिलाये)

-> Now add Some - some Water (पानी) and fant very well and make a smooth batter (चिकना घोल). Now add Eaten yellow color (पीला खाने बाला रंग) and mixed well. So the solution should be diluted slurry. If we'll take 1 tablespoon solution the it should be fell down by the thin edge. (पानी + पीला खाने बाला रंग मिला कर चिकना घोल बनाये) 

-> Now take a big pot and add Ghee (घी) up to half the height of the pot. Heat it. When Ghee (घी) became hot then take 1 tablespoon solution and fell down by the thin edge into hot ghee. When we add the solution into ghee then foam appear at the above  (बर्तन की आधी उचाई तक घी डाल कर गरम करे और एक चम्मच घोल लेकर पतली धार से गिराये)

-> Stop for 2-3 minute. After take another tablespoon solution and and fell down by the thin edge into hot ghee. Again you see the foam appear at the above into the ghee. Wait for 2-3 minute and repeat it. According to your requirement you can make much large Ghevar (घेवर) (२ - ३ मिनट रुक कर दुबारा से १ चम्मच घोल पतली धार से गिराये)

-> When you put the enough solution into ghee the slow the gas and fried it until Ghevar (घेवर ) turn to golden brown in color. (घेवर को हल्के भूरे रंग का तल ले)

-> Now take Ghevar (घेवर ) and soaked it into the sweet Syrup (चाशनी) for 1 minute and taken out and keep this Ghevar (घेवर) into a plate. Now dry up the Ghevar (घेवर). (घेवर को चाशनी में भिगो कर निकाल कर सूखने रख दे)

-> Your sweet Ghevar (घेवर) is ready. Garnished it with Dry Fruits (सूखे मेवे).(सूखे मेवे से सजाये )
