Ghugni

^ Preparation Time : 10 Minutes. ^ Cooking Time : 30 Minutes. ^  Serves 4. ^ Soaking Time : 5 to 6 Hours

 


 

घुग्नी 

 

Ingredients (सामग्री)

 

Chickpeas or Kabuli Chana (छोले और काबुली चना) ---------- 2 Cups

Salt (नमक) ---------- To taste

Coriander Seeds (धनिया बीज) ---------- 1 smallspooon 

Pepper (काली मिर्च) ---------- 1 smallspooon

Garam Masala (गरम मसाला) ---------- 1 smallspooon

Ghee (घी) ---------- 1 smallspooon

Cumin Seeds (जीरा) ---------- 1 smallspooon

Chopped Potatoes (कटा हुआ आलू) ---------- 1/4 cup

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 smallspooon

Dry Kashmiri red Chillies (सूखी कश्मीरी लाल मिर्च) ---------- 2 to 3

 

 

How to make Ghugni (घुग्नी बनाने की विधि)

 

-> First clean and washed the Chickpeas or Kabuli Chana (छोले और काबुली चना) with clean water and soaked it into water for 5 to 6 hours. (छोले और काबुली चनो को पानी भिगो कर रखे)

 

-> Drain the water of the Chickpeas (छोले) and taken the Chickpeas (छोले) + water (पानी) + Salt (नमक) in a pressure cooker and keep boiling for 4 to 5 whistles or till the Chickpeas (छोले) has been cooker. (छोले + पानी  + नमक को प्रेशर कुकर में पका ले)

 

-> When the pressure of the cooker is remove then open the led of the cooker and drain the water of Chickpeas (छोले) and keep aside.(प्रेशर खत्म होने पर ढक्कन खोले और छोले से पानी निकाल दे)

 

-> Now heat the tava and put the Coriander Seeds (धनिया बीज) + Pepper (काली मिर्च) + Garam Masala (गरम मसाला) and dry roast on a slow flame for 2 to 3 minute, while stirring continuously.(धनिया बीज + काली मिर्च + गरम मसाला को गरम तवे पर भुन ले)

 

-> Cool the masala Mixture (मसाला मिश्रण) and blend in a mixer and make a smooth powder. (इन मसालों को ठंडा करके मिक्सी में पीस ले)

 

-> Now heat Ghee (घी) in the non-stick kadhai. When Ghee (घी) became hot then add Cumin Seeds (जीरा) and fry it for 1 minute. Now you add Chopped Potatoes (कटा हुआ आलू) and cook on a medium flame for 4 to 5 minute or they turn to golden brown in color. (घी + जीरा + कटा हुआ आलू को फ्राई करे)

 

-> Now you add Chickpeas or Kabuli Chana (छोले और काबुली चना) + masala Mixture (मसाला मिश्रण) + Turmeric Powder (हल्दी पाउडर) + Salt (नमक), mix well and cook on a medium flame for 5 minute. (अब इसमें छोले और काबुली चना + मसाला मिश्रण + हल्दी पाउडर + नमक मिला दे )

 

-> Now you add 1 cup water (पानी) + Dry Kashmiri red Chillies (सूखी कश्मीरी लाल मिर्च) and mix well and cook on a medium flame for  7 to 8 minute. Stirring in between at regular intervals. (इसमें पानी + सूखी कश्मीरी लाल मिर्च मिला कर पका ले)

 

-> Ghugni (घुग्नी) is ready and served hot.


Nutritional value (पोषण का महत्व) :  Vitamin E : 2.0 mg per Serving

 

Note : A popular Bengali snack which is commonly served with kurmura or Poha..... Kabuli chana adds vitamin E to be the recipe which is an effective antioxidant that is essential during pregnancy for the growing body.
