Guava Curry Recipe

 (अमरूद की सब्जी)

Ingredients (सामग्री):


Guava (अमरूद) ---------- 500 gms or 4-5 medium sized

Tomatoes (टमाटर) ---------- 2-3

Green pepper (हरी मिर्च) ---------- 1-2

Big Cardamom (बड़ी इलाइची) ---------- 2

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/2 smallspoon

Raisins and cashews (किशमिश और काजू) ---------- 10-10

Salt (नमक) ---------- to taste

Ginger (अदरक) ---------- 1 inch long pieces

Fresh Yogurt (ताजा दही) ---------- 1/4 cup

Oil (तेल) ---------- 2 tablespoon

Cumin (जीरा) ---------- 1/4 smallspoon

Asafoetida (हींग) ---------- 1 pinch

Turmeric powder (हल्दी पाउडर) ---------- 1/4 small spoon

Sugar (चीनी) ---------- 2 smallspoon

Green Coriander (हरा धनियां)  ---------- 1 tablespoon

Coriander Powder (धनियां पाउडर) ---------- 1 smallspoon

Black pepper (काली मिर्च) ---------- 5-6

Cloves (लोंग) ---------- 4

Cinnamon (दालचीनी) ---------- 1 pieces


How to make Guava Curry Recipe (अमरूद की सब्जी बनाने की विधि)


-> To make the Guava Curry Recipe (अमरूद की सब्जी) remember that Guava (अमरूद) does not much ripe.  Guava (अमरूद) is much better to be rough (सब्जी के लिये अमरूद पके न हों थोड़े सख्त हो)


-> First washed the Guava (अमरूद) with clean water. After you cut the Guava (अमरूद) into medium pieces. And remove the Guava (अमरूद) seeds. (अमरूद धो कर काट कर बीज निकाल दे)


-> Now take the Tomatoes (टमाटर)-Green pepper (हरी मिर्च)-Ginger (अदरक) into grinder and grind it. Now you add Fresh Yogurt (ताजा दही) and again grind this paste. Take out the paste in a bowl. (टमाटर + हरी मिर्च  + अदरक + दही को पीस ले)


-> Now take Cinnamon (दालचीनी)-Cloves (लोंग)-Black pepper (काली मिर्च)-Big Cardamom (बड़ी इलाइची) and pestle (कूटना) all these things. You also remover the Stalk of Raisins (किशमिश) and but the cashews (काजू) into 2 pieces.(दालचीनी+लोंग+काली मिर्च+बड़ी इलाइची पीसे और काजू काटे और किशमिश की डंठल तोड़े)


-> Now heat the Oil (तेल) in fry pan. When Oil (तेल) became hot then add Cumin (जीरा) + Asafoetida (हींग). After You add Kute spices (कुटे मसाले) + Turmeric powder (हल्दी पाउडर) + Coriander Powder (धनियां पाउडर) and fry some time.(तेल + जीरा  +  हींग + कुटे मसाले + हल्दी पाउडर + धनियां पाउडर फ़्राइ करे )


-> Now you add Tomatoes-Green pepper-Ginger-Yogurt paste (दही-अदरक-हरी मिर्च-टमाटर-दही का पेस्ट) and fry it for 4-5 minute. Now you add Guava pieces (अमरूद के टुकड़े) + Red Chili Powder (लाल मिर्च पाउडर) +  Sugar (चीनी) + Salt (नमक) + Raisins (किशमिश) + cashews (काजू) and mixed very well. (इसमे दही-अदरक-हरी मिर्च-टमाटर-दही का पेस्ट + अमरूद + लाल मिर्च पाउडर +  चीनी + नमक + नमक + किशमिश + काजू डाल कर फ़्राइ करे)


-> Covered this sabzi by lid and cooked it 4-5 minute on medium flame (सब्जी को ढककर पका ले). 


-> Now you can add 1/2 cup water (पानी) and cooked the sabzi for 3-4 minute. Now off the gas and you add Green Coriander (हरा धनियां) (पानी + हरा धनियां मिलाये)


-> Your Guava Curry Recipe (अमरूद की सब्जी) is ready. Served it with Roti (चपाती), Parathe (परांठे) (चपाती + परांठे के साथ परोसे)
