Gujarati Kadhi

 (गुजराती कढ़ी)

Ingredients (सामग्री)


Slightly sour yogurt (थोड़ी खट्टी दही) ---------- 400 gms or 2 cup

Salt (नमक) ---------- to taste

Molasses or Sugar (गुड़ या चीनी) ---------- 1 spoon

Whole red pepper (साबूत लाल मिर्च) ---------- 2

Red chilli powder (लाल मिर्च पाउडर) ---------- 1/4 smallspoon

Cumin (जीरा) ---------- 1/2 spoon

Grated ginger (कद्दूकस किया अदरक) ---------- 1 smallspoon

Bay Leaf (तेज्पता) ---------- 6-7

Asafoetida (हींग) ---------- 3 pinch

Turmeric Powder (हल्दी पाउडर) ---------- 1/4 smallspoon

Chopped green chilies (बारीक कटी हरी मिर्च) ---------- 1 spoon

Chopped Green Coriander (कटा हरा धनियां) ---------- 2 tablespoon

Mustard seeds (सरसों के दाने) ---------- 1/2 spoon

Fenugreek Seeds (मैथी के दाने) ---------- 1/2 spoon

Gram-flour (बेसन) ---------- 80 gms or 1/2 cup

Oil (तेल) ---------- 2-3 tablespoon


How to make Gujarati Kadhi (गुजराती कढ़ी बनाने की विधि)


-> Filtrate the Gram Flour (बेसन) in big pot and add Slightly sour yogurt (थोड़ी खट्टी दही) and mixed very well. (बेसन छान कर इसमें दही मिला दे)


-> Now add water in this solution. Mixture is ready for kadhi.(इस घोल में दही का ३ गुना पानी मिला दे). 


-> Now take a fry pan and heat the Oil (तेल). When Oil (तेल) became hot then add Cumin (जीरा) + Fenugreek Seeds (मैथी के दाने) + Mustard seeds (सरसों के दाने) and fried. When they fried then you add Bay Leaf (तेज्पता) + Asafoetida (हींग) + Turmeric Powder (हल्दी पाउडर) + Chopped green chilies (बारीक कटी हरी मिर्च) + Grated ginger (कद्दूकस किया अदरक) and fried it for 1 minute. (तेल + जीरा + मैथी के दाने + सरसों के दाने + तेज्पता + हींग + हल्दी पाउडर + हरी मिर्च + अदरक फ़्राइ करे)


-> Now you add kadhi mixture. Cooked it 2-3 minute on high flame gas. When it comes to boil then slow the gas flame. Now you add Salt (नमक) + Molasses or Sugar (गुड़ या चीनी) + Chopped Green Coriander (कटा हरा धनियां)  + Red chilli powder (लाल मिर्च पाउडर) and cooked it for 20 to 25 minute. (इसमे कढ़ी का घोल +  नमक + गुड़ या चीनी + हरा धनियां + लाल मिर्च पाउडर डाल कर पकाये)


-> Your Gujarati Kadhi (गुजराती कढ़ी) is ready. Taken out the kadhi in a bowl and heat the some Oil (तेल) in tadka pan. When Oil (तेल) became hot then add Cumin (जीरा) + Whole red pepper (साबूत लाल मिर्च). Spread this takka in kadhi.And served this kadhi with Roti (चपाती), Naan (नान) or Rice (चावल).
