Gujiya Recipe (गुझिया)

Ingredients For Gujiya Dough (गुझिया के आटे की सामग्री)


Fine flour (मैदा) ---------- 500 gms or 4 cup

Milk or Yogurt (दूध या दही) ---------- 50 gms or 1/4 cup 

Ghee (घी) ---------- 125 gms or 2-3 cup  (आटा गूथने में डालने के लिये)

Oil / Ghee (तेल/घी) ---------- For fried 


Ingredients For Stuffing (भरवान के लिये सामग्री)


Mawa (मावा) ---------- 400 gms or 2 cup

Rava (सूजी) ---------- 100 gms or 1 cup 

Ghee (घी) ---------- 2 spoon

Bura (बूरा) ---------- 400 gms or 2 cup 

Cashewnut (काजू) ---------- 100 gms 

Raisins (किशमिश) ---------- 50 gms 

Small Cardamom (छोटी इलाइची) ---------- 7-8 

Grated Dry coconut (सूखा नारियल कद्दूकस किया हुआ) ---------- 100 gms or 1 cup


How to make Gujiya (गुझिया बनाने की विधि)


-> First  filtrate (छानना) the Fine flour (मैदा) and add Ghee (घी) and mixed very well. Now you add Milk or Yogurt (दूध या दही) and with the help of water (पानी) make a tight dough. Keep this dough for 30-35 minute. (मैदा छाने और घी + दूध या दही + पानी  मिला कर कड़ा आटा गूथ ले)


-> Now in a Cauldron (कडाही) roast the Mawa (मावा) until it turn  to golden brown in color. When Mawa (मावा) roast then taken out in a plate. (मावा भुने)


-> Now heat the Ghee (घी) in a Cauldron (कडाही) and add Rava (सूजी) and roast it until it turn to golden brown in color. (घी + सूजी भुने)


-> Now mixed the roasted Rava (भुनी सूजी) + Roasted Mawa (भुना मावा) +  Cashewnut (काजू) + Raisins (किशमिश) + Small Cardamom (छोटी इलाइची) + Grated Dry coconut (सूखा नारियल कद्दूकस किया हुआ) + Bura (बूरा) and mixed very well. This mixture is ready for stuffing. (भुनी सूजी + भुना मावा + काजू + किशमिश + छोटी इलाइची + सूखा नारियल कद्दूकस किया हुआ + बूरा मिलाये, भरवान की सामग्री  तैयार है)


-> Before make the Gujiya (गुझिया) first soften the dough (गुझिया बनाने से पहेले मसल मसल कर आटे को नरम कीजिये)


-> Now made the small ball into this dough and covered it with wet cloth.  Roll out dough balls into small puris, put it on the mould and press lightly. (छोटी लोई बना कर पतला-पतला बेले)


-> Now take 1.5 tablespoon stuffing and put in the center of the poori and fold it like a half moon. Prepare all the Gujiya (गुझिया) same type. Covered it with the wet cloth. (भरवान सामग्री भर कर गुझिया बंद करे)


-> Now heat the Oil / Ghee (तेल/घी) in a Cauldron (कडाही). When Oil / Ghee (तेल/घी) became hot then drop the Gujiya (गुझिया) and fried it on medium heat. You can fried 7-8 Gujiya (गुझिया) at a time. (गुझिया तेल में तल ले)


-> Tasty Gujiya (गुझिया) is ready
