North Indian Food : North Indian meals consist of basically chapatis or rotis or or Parathas served with dal, which is a watery preparation of pulses , vegetables and Curd (yoghurt). In North India region people also uses milk and other dairy products like yogurt, milk, ghee (clarified butter), butter and paneer (cottage cheese). In North region non-vegetarian dishes is highly inspired from the Mughlai cuisine and is absolutely delicious.
South Indian Food : South Indian meals consist of basically rice, along with dals and curries. It is light and easily digested. They use the grated coconut or coconut oil in most of the dishes. A typical south Indian meal would consist of rice and served with piping hot sambhar, rasam, curd and pickles. In south Indian cooking oil use less as compared to north Indian cuisine. Most of items are steamed or shallow fried. Other main cuisine of south is dosa, idli, Vada etc. Most non-vegetarian dishes have fish as the main ingredient and other forms of sea food. Coffee is more popular in South India. Nimbu pani (lemonade), lassi, and coconut milk are also popular.
West Indian Food : In western India, the desert cuisine is famous for its unique taste and varieties of food. Rajasthani and Gujarati cuisine have a wide variety of spicy chutneys and pickles. In Gujarat people add a pinch of sugar to almost every dish.A typical Gujrati "thali" consists atleast 10 different varieties of vegetables alone. In the states like Maharashtra, the food is usually a mix of both north as well as south cooking styles. Maharashtra people prepare a dish called "puran poli" that is famous throughout the country.
East Indian Food : Rice dominates the main meals and the oil used in cooking is usually mustard oil. Some famous dishes are momos, jhaal muri, macherjhol (fish curry), thukpa (soup preparation) and anything related to fish!. East region of India is famous for some of the most popular sweets.Various sweets prepared in this region, by using milk include the 'Roshogollas', 'Sandesh', 'Cham-cham' and many more.
Traditionally, meals are eaten while sitting on the floor. But with the modernization of India, this practice has diminished to great extent.
