Kanji Wada

कांजी बड़ा

Ingredients for Wada (बड़ो के लिये सामग्री)


Moong Dal (मूंग की दाल) ---------- 100 gms (1 small bowl)

Salt (नमक) ---------- To taste

Oil (तेल) ---------- For Fried (तलने के लिये)


Ingredients for Kanji (कांजी के लिये सामग्री)


Water (पानी) --------------- 2 liter or 10 glass

Asafoetida (हींग) --------------- 2-3 pinch

Turmeric powder (हल्दी पाउडर) --------------- 1 small spoon

Red chilli powder (लाल मिर्च पाउडर) --------------- 1/4 - 1/2 spoon

Yellow mustard (पीली सरसों) --------------- 2 small spoon

Simple Salt (सादा नमक) --------------- 1 small spoon (to taste)

Black Salt (काला नमक) --------------- 1 small spoon (if you required)

Mustard oil (सरसों का तेल) --------------- 1-2 tablespoon


How to make Kanji Wada (कांजी बड़ा बनाने की विधि)


For Wada (बड़े बनाने के लिये)

-> First take the Moong Dal (मूंग की दाल) and washed it with clean water (पानी) and soak it in water (पानी) for 2 hour. (दाल धो कर पानी मे भीगो कर रख दे)


-> Now take it out of water and grind it in a grinder Light Drdri (दाल दरदरी पीसे). Take this mixture into big bowl and add Salt (नमक) and mixed it well.  Fat this mixture very well till they being spongy. (दाल दरदरी पीसे और मिला कर अच्छी तरह स्पंजी होने तक फैट लीजिये.)


-> Now heat the oil in frying pan. When oil became hot then make a small - wade and fried it. At a time you can put 8-10 wade in a frying pan and fried it. Fried it until they turn to golden brown. Taken out these Wada (बड़े) into plate. (गरम तेल मे बड़े फ़्राइ कर ले)


For Kanji  (कांजी बनाने के लिये)

-> First boil the water. When water became boild then off the gass and cool this water. (उबले पानी को ठंडा करे)


-> When water became cool then add Asafoetida (हींग) + Turmeric powder (हल्दी पाउडर) + Red chilli powder (लाल मिर्च पाउडर) + Yellow mustard (पीली सरसों) + Simple Salt (सादा नमक) + Black Salt (काला नमक) + Mustard oil (सरसों का तेल) and mixed very well. (हींग + हल्दी पाउडर + लाल मिर्च पाउडर + पीली सरसों  + सादा-काला नमक + सरसों का तेल मिलाये)


-> Now covered this water with lid fot 3 day. (पानी ३ दिन के लिये ढक कर रख दे )


-> Do not forget to run the water clean spoon onece time in a day. Fourth days you test the water, the water tastes sour and is very tasty. (दिन में १ बार पानी को साफ़ चमचे से चलाना मत भूलिये )


-> Kanji (कांजी) is ready


-> Before to served the Kanji Wada (कांजी बड़ा) , you can soak the Wada (बड़ा) in light hot water (गुनगुने पानी) for 10 to 15 minute. After taken out the Wada (बड़ा) in the water and press it by the hand.(बड़े गुनगुने पानी मे भीगो कर रखे और हथेली से दबा कर अतिरिक्त पानी निकाल दीजिये)


-> In one class Kanji  (कांजी) add 4-5 Wada (बड़ा) and served it.
