केसर मुर्ग

Ingredients (सामग्री)

Boneless chicken breasts cut into bite size pieces  (हड्डी रहित चिकन और टुकड़ों में कटा हुआ) ---------- 500 gms

Finely chopped green chillies (कटी हुई हरी मिर्च) ---------- 4

Ginger-garlic paste (अदरक - लहसुन पेस्ट) ---------- 2 tablespoon

Onions paste (प्याज का पेस्ट) ---------- 1/2 cup

Cashew nuts paste (काजू पेस्ट) ---------- 2 tablespoon

Saffron (केसर) ---------- 1 smallspoon

Milk (दूध) ---------- 1 Cup

Sour curd (खट्टा दही) ---------- 1-1/2 Cups

Fresh cream (ताजा क्रीम) ---------- 1 cup

Red chilli powder (लाल मिर्च पाउडर) ---------- 1/2 smallspooon

Coriander Powder (धनिया पाउडर) ---------- 2 tablespoon

Bay leaves (कड़ी पत्ता) ---------- 3-4

Green cardamoms (हरी इलायची) ---------- 2

Whole cloves (साबुत लौंग) ---------- 2

Black pepper powder (काली मिर्च पाउडर) ---------- 1 pinch

White pepper powder (सफेद मिर्च पाउडर) ---------- 1 pinch

Oil (तेल) ---------- 2 tablespoon

Fresh cilantro chopped (ताजा कटा धनिया) ---------- 1 tablespoon

Salt (नमक) ---------- To taste

1 cup fresh cream (ताजा क्रीम) to smear the cooked chicken

How to make Kesar Murg (केसर मुर्ग बनाने की विधि)

-> First clean the chicken (चिकन) and cut into medium size cubes.(चिकन को छोटे टुकड़े में काटे)

-> Now you dissolved the Saffron (केसर) into 1 cup Milk (दूध) and keep aside.(केसर + दूध को मिला कर अलग रखे)

-> Now take Sour curd (खट्टा दही) + Fresh cream (ताजा क्रीम) + Ginger-garlic paste (अदरक - लहसुन पेस्ट) + Onions paste (प्याज का पेस्ट) + Cashew nuts paste (काजू पेस्ट) + Salt (नमक) + Red chilli powder (लाल मिर्च पाउडर) + Coriander Powder (धनिया पाउडर) and mixed very well. (खट्टा दही + ताजा क्रीम + अदरक - लहसुन पेस्ट + प्याज का पेस्ट + काजू पेस्ट + नमक + लाल मिर्च पाउडर + धनिया पाउडर को अच्छी तरह मिला ले)

-> Now you add Chicken pieces (चिकन के टुकड़े) into above mixture and mixed very well. Keep this marinated chicken (मसालेदार चिकन) aside for sometime. (ऊपर के मिश्रण में चिकन के टुकड़े को अच्छी तरह मिला दे)

-> Now heat the Oil (तेल) in a fry pan. When Oil (तेल) became hot then marinated chicken (मसालेदार चिकन) and cook on low flame for 6-7 minutes. (तेल + मसालेदार चिकन को फ्राई करे)

-> Now you add saffron mixture (केसर मिश्रण) + Bay leaves (कड़ी पत्ता) + Green cardamoms (हरी इलायची)  + Whole cloves (साबुत लौंग) + Black pepper powder (काली मिर्च पाउडर) + White pepper powder (सफेद मिर्च पाउडर) and mixed very well. (इसमें केसर मिश्रण + कड़ी पत्ता + हरी इलायची + साबुत लौंग + काली मिर्च पाउडर + सफेद मिर्च पाउडर मिलाये 

-> You also add the chicken stock (चिकन स्टॉक).(चिकन स्टॉक मिलाये)

-> Simmer the flame and leave to cook for 6-7 minutes until chicken (चिकन) gets cooked completely. (चिकन सॉफ्ट होने तक पकाये )

-> Kesar Murg (केसर मुर्ग) is ready. Garnished with fresh cream (ताजा क्रीम) + Fresh cilantro chopped (ताजा कटा धनिया) and served it with roti (रोटी), naan (नान), rice (चावल) or pulao (पुलाव).(ताजा क्रीम + धनिया से सजाये और रोटी, नान, चावल, पुलाव से परोसे)
