(मारवाड़ी ताहिरी)

Ingredients (सामग्री) : 


Cooked Basmati rice (पके बासमती चावल) ---------- 2 1/2 cups

Red lentils split (मसूर की दाल) ---------- 2 1/2 cups

Turmeric powder (हल्दी पाउडर) ---------- 1 1/2 tablespoons

Salt (नमक) ---------- to taste

Cinnamon (दालचीनी) ---------- 2 inches

Cloves (लौंग) ---------- 2-3

Bay leaves (बे पत्ते) ---------- 2

Dried red chilies (सूखे लाल मिर्च) ---------- 2

Red chili powder (लाल मिर्च पाउडर) ---------- 2 tablespoons

Onion ,sliced (कटा हुआ बड़ा प्याज)  ---------- 1 large

Dried fenugreek leaves (कसूरी मेथी) ---------- a pinch

Fried Cashewnuts (तले हुए काजू) ---------- 7-8

Fenugreek powder (मेथी पाउडर) ---------- 1 tablespoon + 1/2 smallspoon

Coriander powder (धनिया पाउडर) ---------- 2 tablespoons

Chaat masala (चाट मसाला) ---------- 1smallspoon

Ghee (घी) ---------- 3 tablespoons + 1 smallspoon

Butter (मक्खन) ---------- 2 tablespoons

Finely chopped Green capsicum (बारीक़ कटी हरी शिमला मिर्च) ---------- 1/4

Gatte (गट्टे) ---------- 1/4 cup

Boiled Green peas (उबली हुई हरी मटर) ---------- 2 tablespoons

Boiled Carrot (उबला हुआ गाजर) ---------- 1 small

Tomatoes puree (टमाटर प्यूरी) ---------- 2 medium

Chopped Onion (कटा हुआ प्याज) ---------- 1 small

Finely chopped Garlic (बारीक़ कटा लहसुन)  ---------- 1 tablespoon

Ginger-green chili paste (अदरक-हरी मिर्च पेस्ट) ---------- 2 tablespoons


How to make Marwari Tahiri (मारवाड़ी ताहिरी बनाने की विधि)


-> First washes the Basmati rice (बासमती चावल) with clean water and soaked it into water. You also washed the Red lentils split (मसूर की दाल) and soaked it into water. (बासमती चावल और मसूर की दाल को धो कर पानी में भिगो कर रख दे)


-> Now semi cooked the Red lentils split (मसूर की दाल). (मसूर की दाल को थोडा सा पका ले)


-> Now heat the 1 tablespoon Ghee (घी) and 1 tablespoon Butter (मक्खन) in a handi (हांडी). When they became hot then add broken Cinnamon (टूटी दालचीनी) + Cloves (लौंग) + Bay leaves (बे पत्ते) + Dried red chilies (सूखे लाल मिर्च) + Chopped Onion (कटा हुआ प्याज) and fried it until Onion (प्याज) turn to golden brown in color. (घी + मक्खन + टूटी दालचीनी + लौंग + बे पत्ते + सूखे लाल मिर्च + कटा हुआ प्याज को फ्राई कर ले)


-> Now you add Finely chopped Garlic (बारीक़ कटा लहसुन) and fried it for 1 minute. After you add 1 tablespoon Ginger-green chili paste (अदरक-हरी मिर्च पेस्ट) and mixed very and cooked it for 1 minute. (इसमें बारीक़ कटा लहसुन + अदरक-हरी मिर्च पेस्ट मिला कर पका ले)


-> Now you add Finely chopped Green capsicum (बारीक़ कटी हरी शिमला मिर्च) + Boiled Green peas (उबली हुई हरी मटर) + Boiled Carrot (उबला हुआ गाजर) and mixed very well and cooked it for 2 minute. (इसमें  बारीक़ कटी हरी शिमला मिर्च + उबली हुई हरी मटर + उबला हुआ गाजर मिला कर पका ले)


-> Now you add Tomatoes puree (टमाटर प्यूरी) + Gatte (गट्टे) and mixed it and cooked it for 2 minute. (अब इसमें गट्टे + टमाटर प्यूरी मिला दे)


-> Now you add 1 cup Red lentils split (मसूर की दाल) + Red chili powder (लाल मिर्च पाउडर) + Turmeric powder (हल्दी पाउडर) + Salt (नमक) + 1 1/2 cup rice (चावल) and mixed very well. (मसूर की दाल + लाल मिर्च पाउडर + हल्दी पाउडर + नमक + चावल मिला दे)


-> Now you add 1 tablespoon Fenugreek powder (मेथी पाउडर) into it and mixed very and cooked it for 1 minute and off the gas and keep it aside. (अब इसमें मेथी पाउडर मिला कर पका ले)


-> In other fry Pan heat the remaining Butter (मक्खन) + 2 tablespoons Ghee (घी). When it became hot then add remaining Ginger-green chili paste (अदरक-हरी मिर्च पेस्ट) and cooked it for 1 minute. (मक्खन + घी + अदरक-हरी मिर्च पेस्ट को फ्राई कर ले)


-> Now add remaining Red lentils split (मसूर की दाल) + remaining Red chili powder (लाल मिर्च पाउडर) + remaining Turmeric powder (हल्दी पाउडर) + Coriander powder (धनिया पाउडर) + 1/2 smallspoon Fenugreek powder (मेथी पाउडर) + Chaat masala (चाट मसाला) and mixed very well and cooked it for 2 minute. (अब इसमें मसूर की दाल + लाल मिर्च पाउडर + हल्दी पाउडर  + धनिया पाउडर  + मेथी पाउडर + चाट मसाला मिला कर पका ले)


-> Now Apply 1 smallspoon Ghee (घी) on the base of another handi. Spread a layer of 1 cup white rice, ½ a layer of cooked dal mixture and lastly a layer of ½ of the cooked rice.


-> Spread another portion of white rice, top with a layer of remaining cooked dal mixture and lastly remaining cooked rice layer. Spread remaining white rice on top, cover and cook for 2 minutes.
