मटर की कचौड़ी

Ingredients (सामग्री)

Fine flour (मैदा ) ---------- 400 gms

Refined oil (रिफाइन्ड तेल) ---------- 50 gms

Salt (नमक) ---------- To taste

Ingredients for Stuffing Kachori (कचौरी भरने के लिये सामग्री)

Green peas (हरी मटर के दाने) ---------- 1 cup

Oil (तेल) ---------- 2 spoon

Asafetida (हींग) ---------- 2 pinch

Cumin (जीरा) ---------- 1/2 small spoon

Coriander Powder (धनियां पाउडर) ---------- 1-1/2 Spoon

Fennel Powder (सोंफ पाउडर) ---------- 1 spoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/4 spoon

Garam Masala (गरम मसाला) ---------- 1/4 spoon

Amchoor Powder (अमचूर पाउडर) ---------- 1/4 spoon

Chopped Green Chili (बारीक कटी हुई हरी मिर्च) ---------- 1-2

Grated Ginger (कद्दू कस किया अदरक) ---------- 1 spoon

Chopped Green Coriander (कटा हरा धनियां) ---------- 1 spoon

Salt (नमक) ---------- To taste 

Oil (तेल) ---------- For Fried the Kachori 

How to make Matar Kachori (मटर की कचौड़ी बनाने की विधि)

-> First Grind the Green peas (हरी मटर के दाने) into mixi. (हरी मटर को दरदरा पीस ले)

-> Now filtrate (छानना) the Fine flour (मैदा) in a rosette (थाली). Now you add Salt (नमक) + Refined oil (रिफाइन्ड तेल) and mixed very well.  Now with the help of water (पानी) make a smooth dough. Keep this dough for 20-25 minute. (मैदा छाने और नमक +  रिफाइन्ड तेल मिला कर पानी की सहायता से नरम आटा गूंथ ले).

For Stuffing

-> Now heat the 2 tablespoon Oil (तेल) in a fry Pan. When Oil (तेल) became hot then you add Cumin (जीरा) + Asafetida (हींग) and fried it for 1 minute. After you add Coriander Powder (धनियां पाउडर) + Fennel Powder (सोंफ पाउडर) + Grated Ginger (कद्दू कस किया अदरक) +  Chopped Green Chili (बारीक कटी हुई हरी मिर्च) and cooked it for 2 minute. (तेल + जीरा + हींग + धनियां पाउडर + सोंफ पाउडर + अदरक + हरी मिर्च फ़्राइ करे)

-> After you add Green peas (हरी मटर के दाने) paste and mixed very well. Now you add Red Chili Powder (लाल मिर्च पाउडर) + Garam Masala (गरम मसाला) + Amchoor Powder (अमचूर पाउडर) + Salt (नमक) + Chopped Green Coriander (कटा हरा धनियां) and cooked it for 4-5 minute. Matar stuffing is ready. (इसमे पीसी मटर +  लाल मिर्च पाउडर + गरम मसाला + अमचूर पाउडर + नमक + कटा हरा धनियां मिलाकर फ़्राइ करे, मटर की पिठ्ठी तैयार है )

-> Now make a small ball of same sized in the smooth dough.(आटे की छोटी गेंदे बनाये)

-> Now take one ball and roll it small, with the help of rolling pin (बेलन). Now put the 1 tablespoon Matar stuffing (मटर की पिठ्ठी) into this roll and  cover the mixture by small roti. Now with the help of palm flat this roll. Now with the help of rolling pin (बेलन) roll it. (गोले को चकले पर बेलन की सहायता से थोड़ा सा बेलें और दाल की पिठ्ठी भरे धयान रहे की कचोरी फट्नी नहीं चाहिये)

-> Heat the Oil (तेल) in Cauldron (कडाही). Now drop the rolled Kachori (कचौरी) in the oil carefully and fried both side on medium flame. This should take only a few minute. Make all Kachori (कचौरी) similar type. (गरम तेल में कचौरी मीडियम गैस पर तलें)

-> Hot-Hot tasty Matar Kachori (मटर की कचौड़ी) is ready. Served Green coriander chutney (हरे धनिये की चटनी), tomato chutney (टमाटर की चटनी) (हरे धनिये की चटनी + टमाटर की चटनी  से परोसे)
