^ Preparation Time : 10 to 15 Minutes. ^ Cooking Time : 15 to 20 Minutes. ^  Serves 4 (Makes 16 mini theplas)



मिनी ग्रीन ठेपले 


Ingredients For Topping (सामग्री)


Oil (तेल) ---------- 1 tablespoon 

Thinly Sliced Onions (बारीक कटा हुआ प्याज) ---------- 1/4 Cup

Finely Chopped Capsicum (बारीक कटी हुई शिमला मिर्च) ---------- 3/4 Cup

Grated Cheese (कसा हुआ पनीर) ---------- 1/4 Cup

Finely Chopped Coriander (बारीक कटी हुई धनिया) ---------- 2 tablespoon

Salt (नमक) ---------- To taste



Other Ingredients 

Sorghum Flour (ज्वार का आटा) ---------- 1/4 Cup

Soya Flour (सोयाबीन का आटा) ---------- 1/4 Cup

Red Millet Flour (लाल बाजरे का आटा) ---------- 1/4 Cup

Oats Flour (जई का आटा) ---------- 1 Cup

Finely Chopped Spinach (बारीक कटी पालक) ---------- 1 Cup

Sesame Seeds (तिल) ---------- 1 tablespoon

Ginger-Green Chilli Paste (अदरक-हरी मिर्च का पेस्ट) ---------- 1 tablespoon

Garlic Paste (लहसुन का पेस्ट) ---------- 2 smallspoon

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 smallspooon

Oil (तेल) ---------- 3 tablespoon 

Salt (नमक) ---------- To taste

Lemon Juice (नींबू का रस) ---------- A Few Drops

Sugar (चीनी) ---------- 1 pinch



How to make Mini Green Theplas (मिनी ग्रीन ठेपले बनाने की विधि)



For the Topping 

-> Heat the Oil (तेल) in a non-stick Kadhai. When Oil (तेल) became hot then add Thinly Sliced Onions (बारीक कटा हुआ प्याज) and fried it until the Onions (प्याज) turn to light brown in color. (तेल + प्याज को फ्राई करे)


-> Now you add Finely Chopped Capsicum (बारीक कटी हुई शिमला मिर्च) + Grated Cheese (कसा हुआ पनीर) + Finely Chopped Coriander (बारीक कटी हुई धनिया) + Salt (नमक) and mixed very well and cooked it on a slow flame gas for another 2 - 3 minutes.(अब इसमें बारीक कटी हुई शिमला मिर्च + कसा हुआ पनीर + बारीक कटी हुई धनिया + नमक मिला कर पका ले)


-> Cool this mixture (मिश्रण) and divide it into 16 equal portions and keep aside. (इस मिश्रण को ठंडा करे और 16 भागो में बाटे)



How to proceed

-> First filtrate the Sorghum Flour (ज्वार का आटा) + Soya Flour (सोयाबीन का आटा) + Red Millet Flour (लाल बाजरे का आटा) + Oats Flour (जई का आटा) in a plate and mixed very well. (ज्वार का आटा + सोयाबीन का आटा + लाल बाजरे का आटा + जई का आटा को मिला ले)


-> Now you add Finely Chopped Spinach (बारीक कटी पालक) + Sesame Seeds (तिल) + Ginger-Green Chilli Paste (अदरक-हरी मिर्च का पेस्ट) + Garlic Paste (लहसुन का पेस्ट) + Turmeric Powder (हल्दी पाउडर) + 1 tablespoon Oil (तेल) + Salt (नमक) + Lemon Juice (नींबू का रस) + Sugar (चीनी) and mixed very well. (इस आटे में बारीक कटी पालक  + तिल + अदरक-हरी मिर्च का पेस्ट + लहसुन का पेस्ट + हल्दी पाउडर + तेल + नमक + नींबू का रस + चीनी मिलाये)


-> Now with the help of enough water (पानी) make a smooth dough and keep it aside for 15 minute. (पर्याप्त पानी के सहायता से नरम आटा गूथ ले)


-> Now divide the dough into 16 equal parts and make a small sized ball. Now roll out a portion into a 3 " diameter and thick circle, using a little dry Sorghum Flour (ज्वार का आटा). (इस आटे को बारबर भागो में बाटो पतला पतला बेल ले)


-> Heat a non-stick tava and cook the theple (ठेपले) using Oil (तेल), till it turns to golden brown in color from both side. Make all the theple (ठेपले) is same type. (ठेपलो को तेल लगा कर गरम तवे पर सेक ले)


-> Spread a Topping mixture (टॉपिंग मिश्रण) on each theple (ठेपले) and served immediately. (टॉपिंग मिश्रण को प्रत्येक ठेपले पर रखे और परोसे)


Nutritional value (पोषण का महत्व) :  Vitamin A : 1108.7 mcg per Serving

   Folic Acid : 35.0 mcg per Serving

   Vitamin C : 35.7 mg per serving


Note : A Completely nourishing breakfast that will keep you active throughout the day - The recipe calls for a lot of ingredients, but the combination of different flour along with antioxidant rich vegetables makes this thepla a complete meal package.
