मूर्घ मुस्सल्लम

Ingredients (सामग्री)

Chicken (चिकन) ---------- 800 grams

Ginger-garlic paste (अदरक, लहसुन पेस्ट) ---------- 1 tablespoon

Red chilli powder (लाल मिर्च पाउडर) ---------- 1 smallspoon

Salt (नमक) ---------- To taste

Lemon Juice (नींबू का रस) ---------- 1/2

Oil (तेल) ---------- 3 tablespoons

For stuffing (भराई के लिए)

Oil (तेल) ---------- 2 tablespoons

Cumin seeds (जीरा) ---------- 1 smallspoon

Chapatis (चपाती) ---------- 3

Red chilli powder (लाल मिर्च पाउडर) ---------- 1/2 smallspoon

Amchur powder (आमचूर पाउडर) ---------- 1 smallspoon

Cashewnuts (काजू) ---------- 15-20

Raisins (किशमिश) ---------- 2 tablespoons

Turmeric powder (हल्दी पाउडर) ---------- a pinch

Cooked rice (पके हुए चावल) ---------- 1 cup

Salt (नमक) ---------- To taste

For gravy (ग्रेवी के लिए)

Oil (तेल) ---------- 4-5 tablespoons

Cumin seeds (जीरा) ---------- 1 smallspoon

Finely chopped Onions (बारीक कटा प्याज) ---------- 2 medium

Finely chopped Tomatoes (बारीक कटा टमाटर) ---------- 2 medium

Ginger-garlic paste (अदरक - लहसुन पेस्ट) ---------- 1 tablespoon

Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर) ---------- 1 smallspoon

Turmeric powder (हल्दी पाउडर) ---------- a pinch

Coriander powder (धनिया पाउडर) ---------- 1 tablespoon

Cumin powder (जीरा पाउडर) ---------- 1/2 smallspoon

Garam masala powder (गरम मसाला पाउडर) ---------- 1/2 smallspoon

Green cardamom powder (हरी इलायची पाउडर) ---------- a pinch

Cashewnut paste (काजू पेस्ट) ---------- 1/2 cup

Salt (नमक) ---------- To taste

Grated Khoya/mawa (कसा हुआ खोया/मावा) ---------- 3 tablespoons

Lemon Juice (नींबू का रस) ---------- 1/2

Fresh mint leaves (ताजे पोदीने के पत्ते) ---------- 8-10

Fresh cream (ताजा क्रीम) ---------- 1 cup

How to make Murgh Mussallam (मूर्घ मुस्सल्लम बनाने की विधि)

-> First cut the Chicken (चिकन) and place it in a bowl. Now you add Ginger-garlic paste (अदरक, लहसुन पेस्ट) + Red chilli powder (लाल मिर्च पाउडर) + Salt (नमक) + Lemon Juice (नींबू का रस) and mix well so that the chicken pieces (चिकन के टुकड़े) are well coated. (चिकन के टुकड़ो को अदरक, लहसुन पेस्ट + लाल मिर्च पाउडर + नमक + नींबू का रस में मिलाये)

-> Keep the chicken pieces (चिकन के टुकड़े) for 15 - 20 minutes. (चिकन के टुकड़ो को अलग रखे)

-> Now heat 3 tablespoon Oil (तेल) in non stick pan. When Oil (तेल) became hot then add marinated chicken (मसालेदार चिकन) and fried it for 1 minute. After cover it and cook until Chicken (चिकन) cooked evenly on both sides. (तेल + मसालेदार चिकन को दोनों तरफ से अच्छी तरह फ्राई करे, और अलग रखे)

-> Now cut the Chapatis (चपाती) into small pieces. (चपाती को छोटे टुकडो में काटे)

-> Heat 2 tablespoon Oil (तेल) in non stick pan. When Oil (तेल) became hot then Cumin seeds (जीरा) and fried it for few second.Now you add Chapatis (चपाती) and cooked till crisp. (तेल + जीरा + चपाती को फ्राई करे)

-> Now you add Red chilli powder (लाल मिर्च पाउडर) + Amchur powder (आमचूर पाउडर) + Cashewnuts (काजू) + Raisins (किशमिश) + Turmeric powder (हल्दी पाउडर) + Cooked rice (पके हुए चावल) + Salt (नमक) mix well and cooked for 3 - 4 minute. Transfer this mixture into another bowl and set aside. (लाल मिर्च पाउडर + आमचूर पाउडर + काजू + किशमिश + हल्दी पाउडर + पके हुए चावल + नमक मिलाये और पकाये )

-> Preheat oven at 160° C.To make gravy (ग्रेवी), heat 4 tablespoon Oil (तेल)  in a non stick pan, add Cumin seeds (जीरा) and fried it for few second.Now you add Finely chopped Onions (बारीक कटा प्याज) and fried it until it turns to golden brown in color. (ओवन में ग्रेवी बनाये, तेल + जीरा + प्याज को फ्राई करे)

-> Transfer the Chicken (चिकन) into an ovenproof dish and stuff it with the rice-chapatti mixture (चावल चपाती मिश्रण). (चिकन में चावल - चपाती मिश्रण भरे)

-> Lift the Chicken (चिकन) and spread remaining rice-chapatti mixture (चावल चपाती मिश्रण) in the dish and place the Chicken (चिकन) on it and set it aside. (चिकन को उठाये और चावल चपाती मिश्रण पर रखे)

-> Now you add Finely chopped Tomatoes (बारीक कटा टमाटर) + Ginger-garlic paste (अदरक - लहसुन पेस्ट) and fried it till tomatoes turn pulpy. (इसमें  बारीक कटा टमाटर + अदरक - लहसुन पेस्ट मिलाये और पकाये)

-> Now you add Kashmiri red chilli powder (कश्मीरी लाल मिर्च पाउडर) + Turmeric powder (हल्दी पाउडर) + Coriander powder (धनिया पाउडर) + Cumin powder (जीरा पाउडर) + Garam masala powder (गरम मसाला पाउडर) + Green cardamom powder (हरी इलायची पाउडर) and mixed very well and cook for 6 - 8 minute. (कश्मीरी लाल मिर्च पाउडर + हल्दी पाउडर + जीरा पाउडर + गरम मसाला पाउडर + हरी इलायची पाउडर मिलाये)

-> Add Cashewnut paste (काजू पेस्ट) + Salt (नमक) and cooked until the Oil (तेल) separates. Add 1 cup water (पानी) and mix very well. Now you add Grated Khoya/mawa (कसा हुआ खोया/मावा)  and cooked it for 4 -5 minute. (काजू पेस्ट + नमक + पानी + कसा हुआ खोया/मावा मिलाये और पकाये)

-> Add Lemon Juice (नींबू का रस) + Fresh mint leaves (ताजे पोदीने के पत्ते) + Fresh cream (ताजा क्रीम) and mixed very well.  Pour the gravy (ग्रेवी) over the Chicken (चिकन) and bake in the preheated oven for 20-25 minutes.(अब इसमें नींबू का रस + नींबू का रस + ताजा क्रीम मिलाये)

-> Murgh Mussallam (मूर्घ मुस्सल्लम ) is ready. Slice and serve hot.
