Nachni Methi Muthia

^ Preparation Time : 10 Minutes. ^ Cooking Time : 30 Minutes. ^  Serves 4.

नाचनी मेथी मुठिया

Ingredients (सामग्री)

Red Millet Flour / Ragi (लाल बाजरे का आटा / रागी) ---------- 1 Cup

Wheat Flour (गेहूं का आटा) ---------- 1 Cup

Gram Flour (बेसन) ---------- 2 tablespoon

Finely Chopped Fenugreek leaves (बारीक कटी मेथी के पत्ते) ---------- 1 1/2 Cup

Garlic Paste (लहसुन का पेस्ट) ---------- 4 smallspoon

Ginger-Green Chilli Paste (अदरक-हरी मिर्च का पेस्ट) ---------- 1 tablespoon

Sugar (चीनी) ---------- 4 smallspoon

Turmeric Powder (हल्दी पाउडर) ---------- 1 smallspoon

Fresh Curd (ताजा दही) ---------- 4 tablespoon

Salt (नमक) ---------- To taste

Soda-bi Carbonate (सोडा बाइकार्बोनेट) ---------- 1 pinch

Finely Chopped Spinach (बारीक कटी पालक) ---------- 1/2 Cup

Oil (तेल) ---------- 4 tablespoon

Mustard Seeds (सरसों के बीज) ---------- 1 smallspoon

Sesame Seeds (तिल) ---------- 1 tablespoon

Asafetida (हींग) ---------- 1/4 smallspoon

Chopped Green Coriander (कटा हरा धनिया) ---------- 2 tablespoon

How to make Nachni Methi Muthia (नाचनी मेथी मुठिया बनाने की विधि)

-> First filtrate the Red Millet Flour / Ragi (लाल बाजरे का आटा / रागी) + Wheat Flour (गेहूं का आटा) and mixed very well. (लाल बाजरे  के आटे  + गेहूं के आटे को छान कर मिला ले)

-> Now you add 1 Cup Fenugreek leaves (मेथी के पत्ते) + Garlic Paste (लहसुन का पेस्ट) + Ginger-Green Chilli Paste (अदरक-हरी मिर्च का पेस्ट) + Sugar (चीनी) + Fresh Curd (ताजा दही) + Salt (नमक) + Turmeric Powder (हल्दी पाउडर) + Soda-bi Carbonate (सोडा बाइकार्बोनेट)  and mixed very well. Now with the help of enough water make a smooth dough. (मेथी के पत्ते + लहसुन का पेस्ट + अदरक-हरी मिर्च का पेस्ट + चीनी + ताजा दही + हल्दी पाउडर + सोडा बाइकार्बोनेट को आटे में मिलाये और पानी की सहायता दे नरम आटा गूथ ले)

-> In other bowl add Finely Chopped Spinach (बारीक कटी पालक) + remaining 1/2 cup Fenugreek leaves (मेथी के पत्ते) and mixed it and keep it aside. (बारीक कटी पालक + मेथी के पत्ते को आपस में मिला ले)

-> Now divide the dough into 30 equal parts and shape them into a cylindrical roll.(आटे को 30 भागो में बाटे और बेलनाकार आकार बना ले)

-> Now each roll one of them in the spinach -fenugreek leaves Mixture (पालक - मेथी के पत्तो का मिश्रण) and coated all the rolls from all sides. (प्रत्येक रोल को पालक - मेथी के पत्तो का मिश्रण में लपेटे)

-> Now grease a sieve using 1/4 spoon Oil (तेल) and arranged the rolls on it and steam in a steamer for 15 minute. (छलनी में तेल लगा कर सारे रोल्स को भाप में पका ले)

-> Cool all these rolls and cuts it into 1/2 " slices and keep it aside. This is called Muthia (मुठिया) (ठंडा करने पर रोल्स को काटे इनको मुठिया कहते है)

-> Now heat the 3 tablespoon Oil (तेल) in a non-stick Kadhai. When Oil (तेल) became hot then add Mustard Seeds (सरसों के बीज) and fried it for 1 minute. (तेल + सरसों के बीज को फ्राई करे)

-> After you add Sesame Seeds (तिल) + Asafetida (हींग) and cooked it on medium flame gas for 1 minute. Now you add Muthia (मुठिया) and cooked it on a medium flame for 3 - 4 minute or till Muthia (मुठिया) turn to light golden brown in color and crisp from both side. (इसमें तिल + हींग + मुठिया डाल कर भूरे होने तक पकाये)

-> Nachni Methi Muthia (नाचनी मेथी मुठिया ) is ready. Served it with Pudina Chutney (पुदीना चटनी). (पुदीना चटनी के साथ परोसे)

Nutritional value (पोषण का महत्व) :  Iron : 3.2 mg per Serving

Note : These Muthia make an amazing snack that is extremely satiating and adds the essential fiber, iron and calcium that the body needs. It is thus an ideal snack for mother - to - be.
