Nethili Meen Kuzhambu

नेथिली मीन कुज्हम्बू 

Ingredients (सामग्री)

Nethili Fish (नेथिली मछली) ---------- 2 cups

Oil (तेल) ---------- 2 to 3 tablespoon

Vadagam (वदगम) ---------- 1 smallspoon

Fenugreek seeds (मेथी के बीज) ---------- 3/4 smallspoon

Curry leaves (करी पत्ते) ---------- 5 - 6

Chopped onions (कटा हुआ प्याज) ---------- 2

Chopped Tomatoes (कटा हुआ टमाटर) ---------- 2

Turmeric powder (हल्दी पाउडर) ---------- 1/4  smallspoon

Red chilly powder (लाल मिर्च पाउडर) ---------- 1 1/2  smallspoon

Coriander powder (धनिया पाउडर) ---------- 1 smallspoon

Pepper powder (काली मिर्च पाउडर) ---------- 1/2 smallspoon

Chopped Brinjal or drumsticks (कटा बैंगन या ड्रमस्टिकस) ---------- 1 cup

Tamarind (इमली) ---------- small ball

Salt (नमक) ---------- To taste

How to make Nethili Meen Kuzhambu  (नेथिली मीन कुज्हम्बू बनाने की विधि)

-> First clean and washed the Nethili Fish (नेथिली मछली) and keep ready. (नेथिली मछली को साफ़ करे)

-> Soak Tamarind (इमली) in 1/4 cup water (पानी) and extract thick juice out of it. (इमली को पानी में भिगो कर गाढ़ा जूस बना ले)

-> Heat Oil (तेल) in a fry pan. When Oil (तेल) became hot then add Vadagam (वदगम) + Fenugreek seeds (मेथी के बीज) + Curry leaves (करी पत्ते) and fried it for 2 minutes. (तेल + वदगम + मेथी के बीज + करी पत्ते को फ्राई करे)

-> Now add the Chopped onions (कटा हुआ प्याज) and fried it until it turn to golden brown in color. After you add Chopped Tomatoes (कटा हुआ टमाटर) and fried it until Tomatoes (टमाटर) is mashed and oil separates. (अब इसमें कटा हुआ प्याज + कटा हुआ टमाटर मिला कर फ्राई करे)

-> Now you add Turmeric powder (हल्दी पाउडर) + Red chilly powder (लाल मिर्च पाउडर) + Coriander powder (धनिया पाउडर) + Salt (नमक) + Pepper powder (काली मिर्च पाउडर) and fried it for few minutes. (अब इसमें हल्दी पाउडर + लाल मिर्च पाउडर + धनिया पाउडर + नमक + काली मिर्च पाउडर मिलाये)

-> Now you add Chopped Brinjal or drumsticks (कटा बैंगन या ड्रमस्टिकस) and cooked it for  2 - 3 minutes. (इसमें कटा बैंगन या ड्रमस्टिकस मिलाये)

-> Now add 1 cup water (पानी) and cook covered , until the vegetable is cooked. (पानी मिला कर सब्जी के गलने तक पकाये)

-> After you add thick Tamarind juice (गाढ़ा इमली का रस) and mix it. Allow the curry to cook on medium flame gas for 4 to 5 minutes. (अब इसमें गाढ़ा इमली का रस मिलाये और पकाये)

-> If the curry attains thick consistency, you can adjust the consistency by adding little water. (अगर करी गाढ़ी लग रही है तो इसमें थोडा पानी मिला ले)

-> Now you add Nethili Fish (नेथिली मछली) stir gently and allow the kuzhambu to boil for just 1 or 2 minutes. ( take care not to overcook, as the fishes (मछली) are very small, they tend to break) (अब इसमें नेथिली मछली मिलाये और धीरे धीरे चलाये और पकाये)

-> Nethili Meen Kuzhambu  (नेथिली मीन कुज्हम्बू) is ready. Garnished it with coriander leaves (धनिया पत्ते). (धनिया पत्ते से सजाये)
