Nutri Paratha

^ Preparation Time : 20 Minutes. ^ Cooking Time : 15 to 20 Minutes. ^  Makes 10 Paratha

न्यूट्री पराठा

Ingredients (सामग्री)

For Paratha (पराठे के लिये)

Wheat Flour (गेहूं का आटा) ---------- 1 Cup

Halim seeds Powder (हलीम के बीज पाउडर) ---------- 1 1/2 smallspoon

Salt (नमक) ---------- 1/2 smallspoon

For Stuffing (भरवान के लिये)

Oil (तेल) ---------- 1 smallspoon

Finely Chopped Mixed Vegetables (Red Capsicum (लाल शिमला मिर्च), Yellow Capsicum (पीली शिमला मिर्च), Spring Onion(हरी प्याज)) ---------- 2 Cup

Finely Chopped Coriander (बारीक कटी हुई धनिया) ---------- 1/4 Cup

Crumble Cheese (पनीर टुकड़े टुकड़े) ---------- 1/2 cup

Finely Chopped Green Chillies (बारीक कटी हुई हरी मिर्च) ---------- 2

Red Chilli Powder (लाल मिर्च पाउडर) ---------- 1 smallspoon

Salt (नमक) ---------- 1/2 smallspoon

Oil (तेल) ---------- For Cooking

How to make Nutri Paratha (न्यूट्री पराठा बनाने की विधि)

-> First filtrate the Wheat Flour (गेहूं का आटा) in a bowl and add Halim seeds Powder (हलीम के बीज पाउडर) + Salt (नमक) and mixed very well. Now with the help of enough water make a smooth dough and keep it aside. (गेहूं के आटे को छाने और हलीम के बीज पाउडर + नमक मिलाये और पानी की सहायता से नरम आटा गूथ ले)

-> Now heat the 1 spoon Oil (तेल) in non-stick Kadhai. When Oil (तेल) became hot then add Mixed Vegetables (मिश्रित सब्जियों) and cooked it on a medium flame gas for 3 minute. (तेल + मिश्रित सब्जियों  को फ्राई करे)

-> Now you add Finely Chopped Coriander (बारीक कटी हुई धनिया) + Crumble Cheese (पनीर टुकड़े टुकड़े) + Green Chillies (हरी मिर्च) + Red Chilli Powder (लाल मिर्च पाउडर) + Salt (नमक) and mixed very well and cooked it for 2 another minute.(इसमें बारीक कटी हुई धनिया + पनीर + हरी मिर्च + लाल मिर्च पाउडर + नमक मिला कर पकाये)

-> Cool this stuffing mixture (मिश्रण भराई) and divide this mixture (मिश्रण) into 10 equal parts. (इस मिश्रण को ठंडा कर के 10 भागो में बाटे)

-> Now Divide the dough into 10 equal portions and shape into round small balls. (आटे की छोटी गेंदे बनाये)

-> Now take 1 ball and put some oil is in center of balls and put some stuffing mixture (मिश्रण भराई) and cover the mixture with the roti. (आटे की छोटी गेंदे बना कर बेले और पनीर की पिठ्ठी बीच मे रखे और परांठे को चारो तरफ से बंद कर दे और बेलन से बेले)

-> Now roll it slightly and make size just like a roti and on tava cook the parathas on both the sides with the oil. And cook them until parathas became golden brown. थोडा सा तेल लगा कर पराठे को दोनों तरफ से हल्का भूरा होने तक तवे पर फ़्राइ कर ले)

-> Hot Nutri Paratha (न्यूट्री पराठा) is ready and served it with fresh curd (ताजा दही) or sos (सोस). (दही-सोस से परोसे)

Nutritional value (पोषण का महत्व) :  Iron : 1.1 mg per Paratha (पराठा)

Note : The garden Cress plant and its high iron content amongst vegetarian food is little - known to the world. It is nothing short of a wonder food and must find its place in the Indian Kitchen. Try these delicious and healthy Parathas !
