Palak Curry with Malai Kofta

(मलाई कोफ्ता पालक ग्रेवी के साथ)

Ingredients For Kofta (कोफ्ता बनाने के लिये सामग्री)


Cheese (पनीर) ---------- 200 gms

Mava (मावा) ---------- 100 gms

Potato (आलू) ---------- 2-3 boiled

Raisin (किशमिश) ---------- 15-16

Cashewnuts (काजू) ---------- 7-8

Salt (नमक) ---------- to taste or 1/2 small spoon

Grated Ginger (कद्दूकस किया अदरक) ---------- 1 spoon

Arrowroot or Corn flour (अरारोट या कार्न फ्लोर) ---------- 2 tablespoon

Oil (तेल) ---------- For fried the Kofta 


Ingredients For Spinach Gravy (पालक ग्रेवी बनाने के लिये सामग्री)


Spinach (पालक) ---------- 500 gms

Tomatoes (टमाटर) ---------- 3 medium sized

Oil (तेल) ---------- 2 tablespoon

Chopped Onion (बारीक़ कटा प्याज) ---------- 2-3

Green Chili (हरी मिर्च) ---------- 2-3

Salt (नमक) ---------- to taste

Garam Masala (गरम मसाला) ---------- 1/4 smallspoon

Ginger (अदरक) ---------- 1

Red Chili Powder (लाल मिर्च पाउडर ) ---------- 1/4 smallspoon

Asafoetida (हींग) ---------- 1 pinch

Cumin जीरा ---------- 1/2 smallspoon

Lime juice (नीबू का रस) ---------- 2 smallspoon

Sugar (चीनी) ---------- 1/2 spoon

Kasuri Fenugreek Seeds (कसूरी मैथी) ---------- 2 smallspoon is you want (यदि आप चाहें)

Gram Flour (बेसन) ---------- 2 smallspoon

Cream or Malai (क्रीम या मलाई) ---------- 2 tablespoon is you wants(यदि आप चाहें तो)


How to make Palak Curry with Malai Kofta (मलाई कोफ्ता पालक ग्रेवी के साथ बनाने की विधि)

 

For Kofta (कोफ्ता बनाने के लिए)

-> First washed the Potato (आलू) and boiled it. When Potato (आलू) became cool the peel it and break it. Cuts the Cashewnuts (काजू) into 5-6 pieces and remove the stalk of Raisin (किशमिश का डंठल). (आलू उबाल कर छिल ले और तोड़ ले, काजू काट ले और किशमिश का डंठल तोड़ ले)


-> Now in other pot take Mava (मावा) + Cheese (पनीर) + Potato (आलू) + Salt (नमक) + Arrowroot or Corn flour (अरारोट या कार्न फ्लोर) + Grated Ginger (कद्दूकस किया अदरक) and mixed very well. This mixture is ready to make Kofta (कोफ्ता).( मावा + पनीर + आलू + नमक + अरारोट या कार्न फ्लोर + अदरक मिलाये, कोफ्ते का मिश्रण तैयार है)


-> Now take a fry pan and add Oil (तेल) and put on to gas. When oil became hot then take some portion into the mixture and roll it. Now with help of palm (हथेली) flat (चपटा) this roll and add 2-3 pices of Cashewnuts (काजू) + 3-4 Raisin (किशमिश). Now take the all side and closed it and make a small sized ball. (कोफ्ते के मिश्रण से थोड़ा मिश्रण लेकर २-३ काजू के टुकड़े और २-३ किसमिस रख कर और बन्द कर के गोल करे और तेल में तल ले)


-> You Kofta (कोफ्ते) is ready.


For Curry (तरी बनाने के लिए)

-> For make the Curry first take Tomatoes (टमाटर) + Green Chili (हरी मिर्च) + Ginger (अदरक) in a grinder and grind it into mixi. Takenout this mixtur in a bowl. (टमाटर + हरी मिर्च + अदरक पीसे)


-> Washed the Spinach (पालक) 2-3 time with clean water. Now take Spinach (पालक) in a pot and add 1/4 tablespoon water (पानी) + Sugar (चीनी) mixed it and boiled the Spinach (पालक) for 5-6 minute. When Spinach (पालक) became boiled the cool it and grind it into mixi. (पालक धो ले और पानी + चीनी डाल कर उबाल ले और पीसे)


-> Heat the Oil (तेल) in a fry Pan. When Oil (तेल) became hot then add Cumin (जीरा) + Asafoetida (हींग) and fried it. After you add chopped onion (बारीक़ कटा प्याज) and cooked it until it trun to golden brown in color. (तेल + जीरा + हींग + प्याज फ़्राइ करे)


-> After you add Kasuri Fenugreek Seeds (कसूरी मैथी) + Gram Flour (बेसन) and cooked it until Gram Flour (बेसन) gives the good smell. (इसमे कसूरी मैथी + बेसन डाल कर भूने)


-> When they cooked then you add Tomatoes-Ginger-Green Chili Paste (टमाटर-अदरक-हरी मिर्च का पेस्ट) + Red Chili Powder (लाल मिर्च पाउडर ) and cooked it 2-3 minute. After you add Cream or Malai (क्रीम या मलाई) and mixed well. Cooked this until Oil (तेल) are separated from masala. (इसमे  टमाटर-अदरक-हरी मिर्च का पेस्ट + लाल मिर्च पाउडर + क्रीम या मलाई मिलाये)


-> Now you add  Spinach Paste (पालक का पेस्ट) and mixed very well. You can add water (पानी) according to your curry requirement. (पालक का पेस्ट मिला कर अपने अनुसार तरी  गाढी  या पतली रखने के लिये पानी मिला दे) 


-> Now you add Salt (नमक) + Garam Masala (गरम मसाला) and cooked it until curry boiled. After slow the gas flame and cooked the curry for 3-4 minute. (नमक + गरम मसाला मिलाये और पकाये)


-> Now you add Kofta (कोफ्ता) and covered this sabzi by lid (ढक्कन) and off the gas.(कोफ्ते मिला कर ढक कर रख दे )


-> Hot and tasty Palak Curry with Malai Kofta (मलाई कोफ्ता पालक ग्रेवी के साथ) is ready to served. Garnished it with Cream or Malai (क्रीम या मलाई). (क्रीम या मलाई डाल कर सजाये)
