Palak Nimki

^ Preparation Time : 5 To 7 Minutes. ^ Cooking Time : 15 Minutes. ^  Serves 4.


पालक निमकी

Ingredients (सामग्री)


Sorghum Flour (ज्वार का आटा) ---------- 1/2 Cup

Wheat Flour (गेहूं का आटा) ---------- 1/2 Cup

Finely Chopped Spinach (बारीक कटी पालक) ---------- 1/2 Cup

Oil (तेल) ---------- 1 spoon

Salt (नमक) ---------- To taste 

Nigella Seeds (कलौंजी) ---------- 1 smallspoon

Oil (तेल) ---------- For deep frying


How to make Palak Nimki (पालक निमकी बनाने की विधि)


-> First filtrate the Sorghum Flour (ज्वार का आटा) and Wheat Flour (गेहूं का आटा) in a bowl and mixed it. (ज्वार का आटा + गेहूं का आटा को छाने और आपस में मिला ले)


-> Now you add Finely Chopped Spinach (बारीक कटी पालक) + 1 Spoon Oil (तेल) + Salt (नमक) + Nigella Seeds (कलौंजी) into flour (आटा) and mixed very well. (अब आटे में बारीक कटी पालक + तेल + कलौंजी + नमक मिला ले)


-> Now with the help of water (पानी) make a semi-stiff (अर्द्ध कठोर) dough. (पानी की सहायता से कड़ा आटा गूथ ले)


-> Now divide this dough into 5 equal parts and roll out each portion into thin round circle of 6" diameter. (आटे को बराबर भागो में बाटो और पतला पतला बेल ले)


-> After you cuts the each circle into equal sized strips and keep aside. (बेले गये भाग को अपने मनपसंद आकार में काट ले)


-> Now heat the Oil (तेल) in a Cauldron (कडाही). When Oil (तेल) became hot then drop the strips and deep fry the nimkis (निमकी) till they turn golden brown in color from both side. (तेल तेल में निमकी को सुनहरा होने तक तल ले)


-> Your tasty Palak Nimki (पालक निमकी) is ready. Cool completely and serve or store in an air tight container.


Nutritional value (पोषण का महत्व) :  Iron : 1.3 mg per serving


Note : A deep-fried snack, made healthy by using fiber like jowar and wheat flour instead of maida and also of spinach to be the recipe help to increase the iron content.
