Paneer Batura

पनीर भटूरा

Ingredients (सामग्री)

Fine Flour (मैदा) ---------- 2 cups

Curd (दही) ---------- 1/2 cup

Cooking soda (खाने का सोडा) ---------- a pinch

Ghee (घी) ---------- 3 smallspoon

Sugar (चीनी) ---------- 1 smallspoon

Salt (नमक) ---------- To taste

Oil (तेल) ---------- as needed

For Stuffing (भरवान के लिये)

Cheese (पनीर) ---------- 200 gms

Onion (प्याज) ---------- 1

Chilli powder (मिर्च पाउडर) ---------- 1/2 smallspoon

Cumin powder (जीरा पाउडर) ---------- 1/2 smallspoon

Turmeric powder (हल्दी पाउडर) ---------- a pinch

Coriander leaves (धनिया पत्ते) ---------- 2 tablespoon

Salt (नमक) ---------- To taste

How to make Paneer Batura (पनीर भटूरा बनाने की विधि)

-> First you filtrate (छानना) the Fine flour (मैदा) in a rosette (थाली). (मैदा को छान ले)

-> Now you add Cooking soda (खाने का सोडा) + Curd (दही) + Sugar (चीनी) + Ghee (घी) in a Fine flour (मैदा). If needed then add a little water (पानी), knead to a dough and keep it aside for half an hour. (खाने का सोडा + दही + चीनी + घी को मैदा में मिलाये और पानी की सहायता से नरम आटा गूथ ले)

-> Cut Onion (प्याज), Coriander leaves (धनिया पत्ते) finely. (धनिया और प्याज को बारीक़ काटे)

-> Now take Cheese (पनीर) + Onion (प्याज) + Chilli powder (मिर्च पाउडर) + Cumin powder (जीरा पाउडर) + Turmeric powder (हल्दी पाउडर) + Coriander leaves (धनिया पत्ते) + Salt (नमक) and mixed very well in a bowl. (पनीर + प्याज + मिर्च पाउडर + जीरा पाउडर + हल्दी पाउडर + धनिया पत्ते + नमक को अच्छी तरह मिलाये)

-> Divide the dough into equal portions and shape into round balls. You also divide the Cheese mixture (पनीर मिश्रण) into equal part and make a ball. (आटे और पनीर मिश्रण को बराबर भागो में बाटे)

-> Take a small portion of the dough. Make a hole in the centre and place the Cheese ball (पनीर बॉल) and closed it. (पनीर बॉल को आटे की बॉल के बीच में रखे)

-> Roll the dough into a thick circle and set aside. Repeat the process. (आटे की बॉल को बेले)

-> Heat the Oil (तेल) in a fry pan. When Oil (तेल) became hot then deep fry the Paneer Batura (पनीर भटूरा) on both side. (गरम तेल में पनीर भटूरा तल ले)

-> Paneer Batura (पनीर भटूरा) is ready. Served it with chole.(छोले के साथ परोसे)
