पनीर चेट्टीनाद

Ingredients (सामग्री)

Cheese (पनीर) ---------- 250gm

Onion (प्याज) ---------- 1 big in sized

Tomato (टमाटर) ---------- 1

Urad dal (उरद दाल) ---------- 1 smallspoon

Fenugreek (मेथी) ---------- 2 smallspoon

Red chilli (लाल मिर्च) ---------- 4

Turmeric powder (हल्दी पाउडर) ---------- 1/2 smallspoon

Cinnamon (दालचीनी) ---------- a small piece

Clove (लौंग) ---------- 2

Peppercorns (काली मिर्च) ---------- 10 

Cumin (जीरा) ---------- 1 smallspoon

Cashewnut (काजू) ---------- 10

Poppy seed (खसखस) ---------- 1 smallspoon

Ginger (अदरक) ---------- a small piece

Curry leaves (करी पत्ते) ---------- 2-3

Garlic (लहसुन) ---------- 6 cloves

Coriander leaves (धनिया पत्ते) ---------- 1 tablespoon

Salt (नमक) ---------- To taste

Oil (तेल) ---------- 2 tablespoon

How to make Paneer Chettinad (पनीर चेट्टीनाद बनाने की विधि)

-> First cut Cheese (पनीर) into lengthwise pieces. (पनीर को लम्बाई में काटे)

-> Cut Onion (प्याज), Tomato (टमाटर), Ginger (अदरक), Garlic (लहसुन) into pieces. (प्याज, टमाटर, अदरक, लहसुन को काटे)

-> Now take the Onion (प्याज) + Tomato (टमाटर) in a grinder and grind it and make a smooth paste.(प्याज + टमाटर को मिक्सी में पीस कर पेस्ट बना ले)

-> You also grind Peppercorns (काली मिर्च) + Cumin (जीरा) + Cashewnut (काजू) + Poppy seed (खसखस) + 1 smallspoon Fenugreek (मेथी) + Red chilli (लाल मिर्च) + Garlic (लहसुन) + Ginger (अदरक) and make a paste. (काली मिर्च + जीरा + काजू + खसखस + मेथी + लाल मिर्च + लहसुन + अदरक को भी मिक्सी में पीस कर पेस्ट बना ले)

-> Heat Oil (तेल) in a frying pan. When Oil (तेल) became hot then add Urad dal (उरद दाल) + 1 smallspoon Fenugreek (मेथी) + Cinnamon (दालचीनी) + Clove (लौंग) + Curry leaves (करी पत्ते) and fry it for 1 minute. (तेल + उरद दाल + मेथी + दालचीनी + लौंग + करी पत्ते को फ्राई करे)

-> Now you add onion - tomato paste (प्याज - टमाटर का पेस्ट) + ground masala (पीसा मसाला पेस्ट) and fry till raw smell subsides. (अब इसमें प्याज - टमाटर का पेस्ट + पीसा मसाला पेस्ट मिलाये और फ्राई करे)

-> Now you add water (पानी) + Salt (नमक) and cook. When gravy start boiling then add Cheese (पनीर) and cook. (अब इसमें पानी + नमक मिला कर ग्रेवी को गाढ़ा होने तक पकाये और इसमें पनीर मिलाये)

-> When gravy start thickening the add Coriander leaves (धनिया पत्ते) and off the gas.(धनिया पत्ते मिलाये और गैस बंद कर दे)

-> Paneer Chettinad (पनीर चेट्टीनाद) is ready.
