Paneer Milagu Kuzhambu

पनीर मिलागु कुज्हम्बू  

Ingredients (सामग्री)

Cheese (पनीर) ---------- 200 gms

Small onion (छोटी प्याज)  ---------- 1/2 cup

Whole Garlic (पूरा लहसुन) ---------- 1

Tomato (टमाटर) ---------- 3

Tamarind (इमली) ---------- a small ball

Curry leaves (करी पत्ते) ---------- 2 - 3 

White pepper (सफेद मिर्च) ---------- 2 smallspoon

Cumin (जीरा) ---------- 2 smallspoon

Grated Coconut (कसा हुआ नारियल) ---------- 1/4 cup

Cashewnut (काजू) ---------- 6

Mustard seeds (सरसों) ---------- 1/2 smallspoon

Fenugreek (मेथी) ---------- 1/2 smallspoon

Salt (नमक) ---------- To taste

Oil (तेल) ---------- as needed

How to make Paneer Milagu Kuzhambu (पनीर मिलागु कुज्हम्बू बनाने की विधि)

-> First Peel garlic (लहसुन) and set aside. (लहसुन को छिले)

-> You also finely chopped the Small onion (छोटी प्याज) and Tomato (टमाटर) and set aside. (छोटी प्याज और टमाटर को बारीक़ काटे)

-> Cut Cheese (पनीर) into pieces. (पनीर को टुकडो में काटे)

-> Heat Oil (तेल) in a frying pan. When Oil (तेल) became hot then add White pepper (सफेद मिर्च) + Cumin (जीरा) + 5 pods of garlic (लहसुन) +  Grated Coconut (कसा हुआ नारियल) + Cashewnut (काजू) and fry it for 2 - 3 minutes. (तेल + सफेद मिर्च + जीरा + लहसुन + कसा हुआ नारियल + काजू को फ्राई करे)

-> Cool this mixture and grind it into grinder and make a smooth paste.(इनको ठंडा कर के मिक्सी में पीस ले)

-> Soak Tamarind (इमली) in water (पानी) and prepare extract. (इमली को पानी में भिगो कर एक्सट्रेक्ट बना ले)

-> Heat Oil (तेल) in a pan. When Oil (तेल) became hot then add Cheese (पनीर) and fry it and set aside. (तेल + पनीर को फ्राई करे)

-> Now you add Mustard seeds (सरसों) + Fenugreek (मेथी) and fried it till mustard (सरसों) splutters. (अब सरसों + मेथी को फ्राई करे)

-> After you add onion (प्याज) + garlic (लहसुन) + tomato (टमाटर) and fry for a few minutes. (अब इसमें प्याज + लहसुन + टमाटर मिला कर फ्राई करे)

-> Now you add tamarind extract (इमली एक्सट्रेक्ट) + ground paste (पीसा पेस्ट) and cook it for 2 minute. (अब इसमें इमली एक्सट्रेक्ट + पीसा पेस्ट मिलाये)

-> At last you add Cheese (पनीर) and when contents start boiling, add Curry leaves (करी पत्ते) and off the gas. (बाद में इसमें पनीर + करी पत्ते मिलाये और पकाये)

-> Paneer Milagu Kuzhambu (पनीर मिलागु कुज्हम्बू) is ready.
