Paratha of Chana Dal

चने की दाल के परांठे

Ingredients (सामग्री)

Wheat flour (गेहूं का आटा) ---------- 250 gms or 2 cup

Garam Masala (गरम मसाला) ---------- 1/4 spoon

Chopped Green Chili (बारीक कटी हुई हरी मिर्च) ---------- 1-2

Chane ki Dal (चने की दाल) ---------- 100 gms or 1/2 cup

Amchoor Powder (अमचूर पाउडर) ---------- 1/2 spoon

Grated Ginger (कद्दूकस किया हुआ अदरक) ---------- 1/2 spoon

Asafetida (हींग) ---------- 2 pinch

Cumin (जीरा) ---------- 1/2 spoon

Coriander Powder (धनियां पाउडर) ---------- 1/2 spoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/4 spoon

Chopped Green Coriander (बारीक कटा हुआ हरा धनियां) ---------- 2 spoon

Salt (नमक) ---------- To taste

Oil (तेल) ---------- For paratha (परांठे बनाने के लिये)

How to make Paratha of Chana Dal (चने की दाल के परांठे बनाने की विधि)

-> Washed the Chane ki Dal (चने की दाल) with clean water and soaked it into water for 5-6 hours. (चने की दाल धो कर पानी में भिगो कर रखे)

-> Now filtrate (छानना) the Wheat flour (गेहूं का आटा) and add Salt (नमक) + 2 tablespoon Oil (तेल) and mixed very. With the help of water (पानी) make a smooth daugh. Keep this daugh for 15 minute. (आटे को छाने और नमक + तेल मिलाकर पानी की सहायता से नरम गूथ ले)

-> Now take Chane ki Dal (चने की दाल) + 1/4 cup water into pressure cooker and Keep boiling. After  1 whistle of the cooker slow the gas and cooked the dal for 5 minute. When remove the pressure of the cooker then taken out the dal into mixi and grind it without the water. (चने की दाल + पानी मिला कर कुकर में पकाये)

-> Now heat the 1 tablespoon Oil (तेल) into fry Pan. When Oil (तेल) became hot then add Cumin (जीरा) + Asafetida (हींग) and fried it for 1 minute. After you add Chopped Green Chili (बारीक कटी हुई हरी मिर्च) + Grated Ginger (कद्दूकस किया हुआ अदरक) + Coriander Powder (धनियां पाउडर) and cooked it for 1-2 minute. (तेल + जीरा + हींग + बारीक कटी हुई हरी मिर्च + कद्दूकस किया हुआ अदरक + धनियां पाउडर मिला कर फ्राई करे)

-> Now you add Chane ki Dal (चने की दाल) + Garam Masala (गरम मसाला) +  Amchoor Powder (अमचूर पाउडर) + Salt (नमक) + Red Chili Powder (लाल मिर्च पाउडर) and cooked it 4-5 minute. After you add Chopped Green Coriander (बारीक कटा हुआ हरा धनियां). Your Dal Stuffing (दाल की पिठ्ठी) is ready. Keep this for cooling. (इसमें चने की दाल + गरम मसाला + अमचूर पाउडर + नमक + लाल मिर्च पाउडर + हरा धनियां पकाये, दाल की पिठ्ठी तैयार है)

-> Now Divide the dough into equal portions and shape into round small balls. (आटे की छोटी गेंदे बनाये)

-> Now take 1 ball and put some oil is in center of balls and put some Dal Stuffing (दाल की पिठ्ठी) items and cover the mixture with the roti. (आटे की छोटी गेंदे बना कर बेले और दाल की पिठ्ठी बीच मे रखे और परांठे को चारो तरफ से बंद कर दे और बेलन से बेले)

-> Now roll it slightly and make size just like a roti and on tawa  cook the parathas on both the sides with the oil. And cook them until parathas became golden brown. थोडा सा तेल लगा कर पराठे को दोनों तरफ से हल्का भूरा होने तक तवे पर फ़्राइ कर ले)

-> Hot Paratha of Chana Dal (चने की दाल के परांठे) is ready and served it with fresh curd (ताजा दही), Tea (चाय), Butter (मक्खन), chutney (चटनी) or sos (सोस). (दही-चाय-मक्खन-चटनी- सोस से परोसे)
