Pumpkin Kofte

कद्दू के कोफ्ते 

Kofta Ingredients (कोफ्ते बनाने के लिये सामग्री)


Pumpkin (कद्दू) ---------- 500 gms 

Gram-flour (बेसन) ---------- 100 gms

Salt (नमक) ---------- to taste

Chopped green chilies (कटी हरी मिर्च) ---------- 2

Grated ginger (कद्दूकस किया अदरक) ---------- 1 spoon

Oil (तेल) ---------- For fried


For Curry Ingredients (तरी के लिये सामग्री)


Tomatoes (टमाटर) ---------- 3-4

Green chilies (हरी मिर्च) ---------- 2

Ginger (अदरक) ---------- 1 inch long pieces

Oil or Ghee (तेल या घी) ---------- 2 tablespoon

Cumin (जीरा) ---------- 1/2 smallspoon

Turmeric powder (हल्दी पाउडर) ---------- 1/2 spoon

Coriander Powder (धनियां पाउडर) ----------1 spoon

Malai or Cream (मलाई या क्रीम) ---------- 1/2 cup

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/6 smallspoon

Garam Masala (गरम मसाला) ---------- 1/4 smallspoon

Salt (नमक) ---------- to taste

Green Coriander (हरा धनियां) ---------- 2 tablespoon


How to make Pumpkin Kofte (कद्दू के कोफ्ते बनाने की विधि)


For Kofta (कोफ्ते बनाने की विधि)


-> First peel the Pumpkin (कद्दू) and remove its seeds (बीज). Now washed it with clean water and grated the Pumpkin (कद्दू धोले और बीज निकाल कर कद्दूकस कर ले)


-> Now take grated Pumpkin (कद्दूकस किया कद्दू ) + Gram-flour (बेसन) + Salt (नमक) + Chopped green chilies (कटी हरी मिर्च) + Grated ginger (कद्दूकस किया अदरक) and mixed very well. Mixture is ready for Kofta (कोफ्ते) (बेसन + नमक + हरी मिर्च + अदरक, कद्दू मे मिलाये)


-> Now take a fry pan and add Oil (तेल) and put on to gas. When oil became hot then take some portion into the mixture and roll it. And pull it into hot Oil (तेल). You can fry more than one Kofta (कोफ्ते) at a time. Fried it until they trun to golden brown in color. (ब्राउन होने तक सारे कोफ्ते तल लीजिये) . Keep all these kofte on a Npkin Paper. Make all these  Kofta (कोफ्ते) same type.  (थोड़ा मिश्रण लेकर गोल करके गरम तेल मे कोफ्ते  ब्राउन होने तक तल लीजिये)


For Curry (तरी बनाने की विधि)

-> First grind the Tomatoes (टमाटर)  + green chilies (हरी मिर्च) + Ginger (अदरक) into mixi and make a smooth paste. Take this paste into bowl.(टमाटर + हरी मिर्च + अदरक पीसे)


-> Now heat the Oil or Ghee (तेल या घी) into fry pan. When Oil or Ghee (तेल या घी) became hot then add Cumin (जीरा) and fry it.  Now you add Tomatoes-green chilies-Ginger (टमाटर-हरी मिर्च-अदरक) and cooked it. (तेल + जीरा + टमाटर-हरी मिर्च-अदरक फ़्राइ करे )


-> Now you add Turmeric powder (हल्दी पाउडर) + Coriander Powder (धनियां पाउडर) and mixed very well and cooked all these masala for 3-4 minute. (हल्दी पाउडर + धनियां पाउडर मिलाकर पकाये)


-> Now you add Malai or Cream (मलाई या क्रीम) and cooked it for 2-3 minute. You can add water according to your curry requirement. (मलाई मिलाकर पकाये और तरी को जितना गाड़ा या पतला करना चाहते हैं उसके अनुसार पानी मिलाये)


-> Now you add Salt (नमक) + Garam Masala (गरम मसाला)  + Red Chili Powder (लाल मिर्च पाउडर) and cooked the Curry (तरी) for 3-4 minute and off the gas. Now you add the Kofta (कोफ्ते) and covered this sabji by lid (नमक + गरम मसाला + लाल मिर्च पाउडर डाल कर पकाये और सब्जी ढक दे). 


-> Your Kaddu Pumpkin Kofte (कद्दू के कोफ्ते ) is ready . Granished it with Green Coriander (हरा धनियां). And served it with Parathe(परांठे), Poori (पूरी), Roti (चपाती), Naan(नान) or Rice (चावल).(परांठे,पूरी, चपाती, नान, चावल के साथ परोसे)




Fried Arabic Sabzi

(तली हुई अरबी की सब्जी)
