Punjabi kadhi Recipe (पंजाबी कढी व्यंजन )

Ingredients (सामग्री):


Gram flour (बेसन) ----------- 3 tbsp

Sour curd (खट्टा दही) ----------- 2 cup

Chopped onions (कटी प्याज) ----------- 1/2 cup

Chopped tomatoes (कटा टमाटर) ----------- 1/2 cup

Chopped ginger (कटा अदरक) ----------- 2-3 pieces  

Turmeric Powder  (हल्दी पाउडर) ----------- 1/2 tsp

Ajwain (अजवाइन) ----------- 1 tbsp

Fenugreek seeds (मेथी के बीज) ----------- 1/2 tbsp

Red Chilli powder(लाल मिर्च पाउडर) ----------- 1/2 tbsp

Oil (तेल)

Salt (नमक) ----------- to taste

 

For the pakodi's (पकोडियो के लिये)

 

Gram flour (बेसन) ----------- 1/4 cup

Red Chilli powder(लाल मिर्च पाउडर) ----------- 1/2 tbsp

Turmeric Powder  (हल्दी पाउडर) ----------- 1/2 tsp

Asfoetida (हींग) ----------- 1 pinch (एक चुटकी)

Oil (तेल) ----------- For Fry

Salt (नमक) ----------- to taste

 

 

How to make Punjabi kadhi (पंजाबी कढी बनाने की विधि)


For the pakodi (पकोडियो के लिये)

-> First Add Gram flour (बेसन) + Red Chilli powder (लाल मिर्च पाउडर) +Turmeric Powder (हल्दी पाउडर) + Asfoetida (हींग) + Salt (नमक) and mixed it with water (पानी). This mixture is ready for pakodi (पकोडी). (बेसन + लाल मिर्च पाउडर + हल्दी पाउडर + हींग + नमक + पानी मिलाये, पकोडी का मिश्रण तैयार है)


-> Heat the Oil (तेल) in a fry Pan. When Oil (तेल) became hot then, make small ball in the pakodi mixture (पकोडी मिश्रण) and fry it until they became golden brown. (पकोडी मिश्रण मे से थोडा मिश्रण लेकर गरम तेल मे तल कर पकोडी बनाये)


For kadhi (कढी के लिये)

-> First Mixed the Gram flour (बेसन) + Sour curd (खट्टा दही) + 2 cups of water (पानी). This mixture is ready for kadhi (कढी). (बेसन + खट्टा दही + पानी मिलाये, कढी मिश्रण तैयार है)


-> Now heat the Oil (तेल) in a fry Pan. Now fry the Ajwain (अजवाइन) +  Fenugreek seeds (मेथी के बीज). After you add Chopped ginger (कटा अदरक) + Chopped onions (कटी प्याज) + Chopped tomatoes (कटा टमाटर) and cooked it for 3-4 minute. (तेल + अजवाइन + मेथी के बीज + अदरक + प्याज + टमाटर फ़्राइ करे)


-> Now you add kadhi mixture (कढी मिश्रण) and cooked it on low flame. After you add Turmeric Powder  (हल्दी पाउडर) + Red Chilli powder(लाल मिर्च पाउडर) + Salt (नमक) and cooked it for 30 minute on medium flame. (इसमे कढी मिश्रण + हल्दी पाउडर + लाल मिर्च पाउडर + नमक डालकर पकाये)


-> When kadhi (कढी) cooked then you add pakodi (पकोडी) and off the gas. And covered it by lid. (कढी मे पकोडी डालकर ढक कर रखे)


-> Punjabi kadhi (पंजाबी कढी) is ready to served. Served it with rice (चावल) and roti (रोटी). (चावल + रोटी के साथ परोसे)




Masala Bhindi

(मसाला भिंडी)

Ingredients (सामग्री)

Ladyfinger (भिंडी) ---------- 250 gms

Salt (नमक) ---------- To taste
