राज कचौरी

Ingredients (सामग्री)


Sooji (सूजी) ---------- 200 gms or 1 cup

Fine flour (मैदा) ---------- 2 tablespoon

Refined oil (रिफाइन्ड तेल) ---------- For Fried

Salt (नमक) ---------- 1/2 smallspoon


Ingredients for Stuffing Kachori (कचौरी भरने के लिये सामग्री)


Boiled potatoes (उबले हुये आलू) ---------- 2-3

Boiled bean or chickpea (उबले हुए मूंग या चना) ---------- 1/2 Cup

Fine flour crust (मैदा की छोटी पपड़ी) ---------- 20

Yogurt Pakodi (दही पकोड़ी) ---------- 10

Yogurt (दही) ---------- 400 gms

Roasted Cumin Powder (भुना हुआ जीरा पाउडर) ---------- 2 spoon

Black Salt (काला नमक) ---------- 1 smallspoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1 smallspoon

Sweet chutney (मीठी चटनी) ---------- 1/2 cup

Green chutney (हरी चटनी) ---------- 1/2 cup

Pomegranate seeds (अनार के दाने) ---------- 1/2 cup

Chopped Green Coriander (कटा हरा धनियां) ---------- 1/2 cup


How to make Raj Kachori (राज कचौरी बनाने की विधि)


-> First filtrate (छानना) the Fine flour (मैदा) + Sooji (सूजी) in a rosette (थाली). Now you add Salt (नमक) + 1 tablespoon Refined oil (रिफाइन्ड तेल) and mixed very well.  Now with the help of water (पानी) make a smooth dough. Keep this dough for 20-25 minute.  (मैदा + सूजी छाने और नमक +  रिफाइन्ड तेल + मिला कर पानी की सहायता से नरम आटा गूंथ ले)


-> Before make the Kachori (कचौरी) first soften the daugh (कचौरी बनाने से पहेले मसल मसल कर आटे को नरम कीजिये)


-> Now make a small ball of same sized in the smooth dough. (आटे की छोटी गेंदे बनाये)


-> Heat the Oil (तेल) in Cauldron (कडाही). Take one ball and roll it into 3 inch Diameter. When oil became hot then drop it into hot oil and with help of Ladle (करछुल) Inflate (फुलाना) the Kachori (कचौरी). When Kachori (कचौरी) is Inflate (फुल) then slow the gas and fried this Kachori (कचौरी) until it turn to golden brown in color. Takenout this into plate. ( गोले को चकले पर बेलन की सहायता से बेलें गरम तेल में डाल कर पलट पलट कर तलें)


-> Now break the Kachori (कचौरी) into middle and put it on plate. Now put the 3-4 pieces of Boiled potatoes (उबले हुये आलू) + 1 spoon Boiled bean or chickpea (उबले हुए मूंग या चना) + 2 Yogurt Pakodi (दही पकोड़ी) + Fine flour crust (मैदा की छोटी पपड़ी). (कचौरी को बीच से तोडे इसमे + 4-5 टुकड़े उबले हुये आलू + 1 चम्मच उबाले हुये मूंग + दही पकोड़ी + मैदा की छोटी पपड़ी रखे)


-> Now you also put the Some Roasted Cumin Powder (थोड़ा सा भुना जीरा) + Black Salt (काला नमक) + Red Chili Powder (लाल मिर्च पाउडर) + Sweet chutney (मीठी चटनी) + Yogurt (दही) + Green chutney (हरी चटनी) + Pomegranate seeds (अनार के दाने). Again you also add Roasted Cumin Powder (जीरा पाउडर) + Red Chili Powder (लाल मिर्च पाउडर) + Chopped Green Coriander (कटा हरा धनियां) +  Yogurt (दही) and served it. (भुना जीरा + काला नमक + लाल मिर्च पाउडर + मीठी चटनी + दही + अनार के दाने + हरी चटनी डाले)


-> Your tasty and spicy Raj Kachori (राज कचौरी) is ready.
